How long does beer last?

Beer does not expire the way milk does. It declines in quality along several different paths, at very different speeds, and only one of those paths has anything to do with safety.

The short answer

Almost all beer is safe to drink long after it stops being good. Beer is a hostile environment for the organisms that cause foodborne illness: ethanol, a pH of roughly 3.8–4.6, hop-derived compounds with antibacterial activity and the near-absence of oxygen all work against them. What changes with time is flavour, and how fast it changes depends far more on how the beer was stored than on the date printed on it.

Useful rules of thumb, in order of how much difference they make. A hop-forward beer — IPA, pale ale, anything hazy — is a different beer after three months and a disappointing one after six; buy it as fresh as you can find it. A standard-strength lager, bitter or stout is good for six months to a year and sound for considerably longer. A strong dark beer — imperial stout, barley wine, old ale — will often be better in three years than it was on release. A lambic or gueuze is not finished until it has had years, and that is the style rather than an accident.

The best-before date on a beer is the brewer’s estimate of the end of the window in which they are prepared to vouch for it. In most jurisdictions it is not a safety date and it is not a legal limit on sale.

Stale is not the same as bad

The word “expired” hides at least six different things that happen to beer. They have different mechanisms, different timescales and different answers, and only one of them means the beer should go down the sink.

What changes, and why

Peak freshness

Volatile hop aromatics are at their highest concentration and no measurable oxidation has occurred. For most beer this begins at packaging; for bottle-conditioned beer it begins once secondary fermentation has finished and the yeast has dropped.

  • Bitterness is clean and finishes cleanly
  • No sherry, cardboard, honey or toffee notes that the style does not call for

Flavour decline

Hop-derived aroma compounds — thiols, terpenes and esters — are volatile and chemically unstable. They dissipate and degrade well before anything else in the beer changes. Nothing has gone wrong; the loudest part of the beer was also its least durable part.

Staling

A collection of slow reactions — Maillard chemistry, Strecker degradation, ester hydrolysis — that continue in the package. Their rate is strongly temperature-dependent: as a rule of thumb reaction rate roughly doubles for every 10 °C, so beer kept warm ages several times faster than beer kept cold.

Oxidation

Oxygen picked up at packaging, or admitted afterwards through the closure, drives the formation of carbonyl compounds — trans-2-nonenal being the best-known, responsible for the cardboard note. In strong dark beer the same chemistry produces sherry, port and dried-fruit notes that many drinkers actively want, which is why oxidation is a fault in one beer and a feature in another.

Lightstrike

Ultraviolet and short-wavelength visible light break down hop-derived iso-alpha-acids. The resulting radical reacts with a sulphur compound from the beer to form 3-methyl-2-butene-1-thiol, which is structurally close to a component of skunk defensive spray and is detectable at extraordinarily low concentrations.

  • Most common in green and clear glass; effectively absent from cans
  • Develops in minutes of direct sunlight, not months of storage

Maturation

In bottle-conditioned and mixed-fermentation beer, live yeast and bacteria keep working after packaging: residual sugars ferment out, harsh young compounds are scavenged, and in mixed cultures Brettanomyces slowly develops the character the style is built on. The beer is not degrading; it is finishing.

Deliberate ageing

A trade rather than a preservation. Strength, high original gravity, low hop-aroma dependence and a robust malt base let a beer absorb slow oxidation and turn it into depth. What is lost is freshness and hop character; what is gained is dried fruit, sherry, leather and integration. Beer that lacks those structural advantages simply gets worse.

Spoilage

Beer-tolerant organisms — chiefly Lactobacillus, Pediococcus and Brettanomyces — surviving in the package where they were not wanted. They produce acidity, haze, ropiness or additional CO₂. These are the same organisms deliberately used in sour and mixed-fermentation brewing, which is why the result is a fault in a pilsner and the entire point in a gueuze.

ContaminationSafety

Beer itself resists human pathogens — ethanol, low pH, hop compounds and the absence of oxygen make it inhospitable, and no foodborne pathogen has been shown to survive in ordinary packaged beer. A breached seal is a different matter: it admits whatever is outside the bottle, and mould at the neck, a rusted-through can or a bottle that has been open in a warm room for days is no longer just beer.

  • A bottle whose cap or cork has lifted, or which gushes violently with no explanation

How to store beer

Four variables, in the order they matter. Most storage advice gives them equal weight; the weighting is the useful part.

1. Temperature

Cool and, above all, stable. Anywhere from fridge temperature to about 13 °C is good; a warm room is the single worst thing you can do to beer you want to keep.

Staling reactions roughly double in rate for every 10 °C. Beer kept at 22 °C ages something like four times faster than the same beer at 2 °C, which is why the same bottle can be excellent from a cold shop and tired from a warm one.

Beer must be kept refrigerated or it goes bad. Refrigeration slows ageing, it does not prevent spoilage in the way it does for perishable food. Beer stored cool and dark at cellar temperature keeps perfectly well; most of the world stored beer that way long before domestic fridges existed.

2. Light

Keep beer dark. This matters enormously for green and clear glass and not at all for cans.

Ultraviolet and short-wavelength visible light break down iso-alpha-acids into the thiol responsible for the skunk note. It is fast — minutes of direct sunlight are enough — and it is irreversible.

Skunky beer has gone off. Lightstrike is a photochemical reaction, not decay. A bottle can skunk on the day it was brewed if it sits in the sun, and a five-year-old can will never skunk at all.

3. Oxygen

Nothing you can do once the beer is sealed, and everything once it is open. Opened beer goes flat and stale within a day.

Oxygen drives the carbonyl chemistry behind cardboard and sherry notes. Sealed packages admit very little; an opened bottle admits a great deal, and simultaneously loses the CO₂ that was protecting the surface.

A spoon in the neck of the bottle keeps beer fizzy. It does not. Carbonation is lost because dissolved CO₂ leaves solution once the pressure above the beer drops, and a metal object in the neck has no effect on that.

4. Upright or on its side

Store beer upright. This is the opposite of the advice for wine, and the reason is specific.

Upright storage minimises the beer surface in contact with the headspace oxygen, and keeps any yeast sediment as a compact layer at the base rather than spread along the side of the bottle. Beer under crown cap has no cork to keep moist, so the wine argument for horizontal storage does not apply. Cork-finished bottles are the partial exception, and even those are usually kept upright once mature.

Beer should be laid down like wine. Almost all beer is sealed with a crown cap, which needs no moistening. Upright storage keeps sediment compact and reduces the beer surface exposed to headspace oxygen.

Does beer need to stay cold?

No — but it benefits from being kept cool, and it very much benefits from being kept at a stable temperature. Refrigeration slows every staling reaction; cellar temperature, around 10–13 °C, is entirely adequate and is how beer was kept for centuries before domestic fridges.

Cold beer that warms up is not ruined. The cycle itself does no special damage; what matters is the total time the beer spends warm, because that is what accelerates staling. A beer that was chilled, warmed on the journey home and chilled again is fine. A beer that spent a summer in a warm room has aged several times faster than one that spent it in a garage, and will taste it.

The exception is unpasteurised, unfiltered beer that was sold cold and is meant to be kept cold — some hazy IPA and most cask beer. There the live yeast and the fragility of the hop aroma make warm storage genuinely damaging, and the brewer’s instruction to keep it refrigerated is worth following.

Cans, bottles and what protects beer best

Cans block light completely and generally admit less oxygen, which makes them the better container for a beer whose appeal is hop aroma. That is a real advantage with a narrow scope: it says nothing about a cask, whose exposure to air is deliberate, and nothing about a bottle-conditioned Belgian ale, where live yeast is doing the protecting.

Green and clear glass is the one genuinely poor choice, and the reason is lightstrike rather than staling. Several famous imported lagers arrive skunked often enough that drinkers have learned to read the note as the brand’s character.

Opened beer

An opened beer loses carbonation within hours and begins oxidising immediately. Resealed and refrigerated it is drinkable the next day, noticeably flatter and duller; beyond that it is not worth keeping. This is a quality judgement rather than a safety one — a two-day-old opened beer is unpleasant, not hazardous.

A spoon in the neck of the bottle does not help. Carbonation is lost because dissolved CO2 comes out of solution once the pressure above the beer drops, and nothing placed in the neck changes that.

When should you actually throw beer away?

Rarely, and for reasons that have nothing to do with the date. Discard beer if the package is compromised: visible mould around the cap or cork, a can that is pierced, rusted through or has a failed seam, a cap or cork that has lifted, or a bottle that gushes violently with no explanation and smells wrong. Those indicate that something got in, which is a different situation from beer that has simply got old.

Everything else on this page is a question of whether the beer is still worth drinking, not whether it is safe to. If it tastes of wet cardboard, it is oxidised and disappointing. If it smells skunky, it caught the light. Neither will do you any harm.
