American pale ale took the British pale ale template and replaced the earthy English hops with Cascade, whose grapefruit and floral character was unlike anything in the existing beer market. The style is the origin point of the entire American craft movement, and of the hop-forward direction it took.
It differs from American IPA mainly in restraint. Lower strength, less bitterness, and a malt backbone that stays present rather than getting out of the way.
This is the style that started American craft brewing, and its design is a straightforward substitution: take an English pale ale and use American hops. Cascade and its relatives brought grapefruit and pine where English varieties gave earth and marmalade, and that single swap defined what American beer would taste like for the next forty years.
It remains the most useful beer in the catalogue for food, because it does two things at once — enough caramel malt to meet roasted and grilled flavours, enough bitterness to cut fat — without the intensity that makes an IPA difficult at the table. A good one is balanced rather than hoppy, and holds its aroma better than an IPA because there is less of it to lose.

Freshness and storage
American pale ale shows best within 2–4 months of packaging. After that it declines in quality rather than becoming unsafe.
Drink fresh. Buy it as young as you can and drink it soon. What makes this beer worth drinking is the first thing to leave it.
- Built on hop aroma, which is the least durable thing in beer. What you are paying for is the first thing to leave.
Hop aroma is the point and it fades first. Buy fresh, check the packaging date, and store cold.
What changes with time
- Flavour decline. The beer is still perfectly sound, but the most volatile parts of its character have faded. Weeks to a few months, fastest in heavily dry-hopped beer.
- Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

How it got here
American pale ale is where Cascade hops first reached a wide audience, in a beer that has been in continuous production since 1980. It gave a generation of American drinkers their first reference point for citrus and pine hop character.
Its influence is out of proportion to its strength: nearly every American hop-forward style that followed is a variation on the template it set, and for many brewers it was the beer that proved a small independent brewery could work.

How it is made
The steps that shape this style in particular, rather than the ones every beer goes through.
- Whirlpool hopping — Steep hops in wort held below boiling — typically 75–85 °C — to extract aroma compounds with far less isomerisation than a boil addition.
- Top fermentation — Ferment warm with Saccharomyces cerevisiae, producing the ester and phenol character that distinguishes ales from lagers.
- Dry hopping — Add hops to beer after fermentation, without heat, to extract aroma compounds while adding essentially no bitterness.
- Wet hopping — Brew with hops that have never been dried, within hours of picking, for a character that does not survive drying.

What is the difference between pale ale and IPA?
Degree, not kind. IPA is stronger — typically 5.5–7.5% against 4.5–6% — more bitter, and far more heavily hopped, particularly late in the process for aroma. Pale ale keeps a malt backbone in balance; IPA subordinates it to hops. The boundary is genuinely blurry, and some beers could reasonably be labelled either.
