Fresh hop season
For a few weeks after the hop harvest, brewers use hops that were never dried — a beer that cannot be made at any other time and cannot be shipped far.
Why it started
Hops are normally kilned within hours of picking, because undried hops spoil. Brewing with them wet is therefore only possible within a day’s drive of a hop farm, in the weeks of harvest, and the practice grew up in the hop-growing regions themselves before spreading as a seasonal release.
What it is
The constraint is what makes the season real rather than a marketing device. A picked hop is around 80% water and begins to degrade almost immediately, so wet-hopped beer has to be brewed within roughly a day of harvest. That ties the beer to a place and to a fortnight in a way almost nothing else in modern brewing is tied.
The flavour is genuinely different rather than simply fresher — greener, more vegetal and grassy, with a softer bitterness, because the aromatic profile of an undried hop is not the profile of the same hop kilned. It is not universally preferred, and it is not meant to be.
Because the beer cannot travel far or keep, fresh hop releases are local and short-lived, and hop-growing regions in Washington, Oregon, Kent, Slovenia and New Zealand have built harvest occasions around them.

Wet hops are driven from the field to the brewhouse and used within hours. Several breweries time a brew day to the harvest and hold the kettle waiting for the delivery.

- What was a local practice in hop-growing areas has become a widely marketed autumn category, and the term "fresh hop" is now sometimes used loosely for beer made with dried hops of the current harvest — which is a different thing.
What people get wrong
Fresh hop beer is just a very hoppy beer.
It is beer made with hops that were never dried. Undried hops carry roughly five times the weight for the same alpha acid and a distinctly greener, more vegetal aroma, and they have to be used within about a day of picking. It is a different ingredient, not a larger quantity of the usual one.
