American IPA is the style that made hop aroma the central point of a beer. Large late-boil, whirlpool and dry-hop additions of high-oil American varieties produce an aroma that arrives before the glass does, and the malt bill is kept deliberately lean so nothing gets in the way.
It is also the most commercially important craft style in the world, and the parent of a whole family of variants that have since diverged considerably from it.
The aroma is engineering rather than chance. Hop oils are volatile and boil off, so bitterness comes from a long boil while aroma comes from additions made after the heat is off — in the whirlpool, or into the fermenter as a dry hop. Modern American varieties were bred for oil content specifically to make this work, which is why the style could not have existed before them.
That also sets the shelf life. Hop aroma is the first thing to go, oxidation turns bright citrus into something papery and vaguely sweet, and a beer that was outstanding at four weeks is ordinary at four months. Buy it as fresh as the packaging date allows, keep it cold, and treat any unrefrigerated IPA of unknown age with suspicion.

Freshness and storage
American IPA shows best within 1–3 months of packaging. After that it declines in quality rather than becoming unsafe.
Drink fresh. Buy it as young as you can and drink it soon. What makes this beer worth drinking is the first thing to leave it.
- Built on hop aroma, which is the least durable thing in beer. What you are paying for is the first thing to leave.
Hop aroma compounds are volatile and degrade fast. A three-month-old IPA is a different and much duller beer than the same one at three weeks. Check the packaging date and store cold.
What changes with time
- Flavour decline. The beer is still perfectly sound, but the most volatile parts of its character have faded. Weeks to a few months, fastest in heavily dry-hopped beer.
- Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.
In the package
- Aluminium can — No light can reach the beer, so lightstrike is impossible in this format. Very low oxygen ingress, which matters for a beer this dependent on hop aroma.
- Brown glass bottle — No format-specific concerns beyond the general advice above.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

- Faded hop character — The specific staling of hop character: the aroma fades first, and badly stored hops can turn cheesy.
- Oxidation — The universal ageing fault: oxygen degrades beer into papery, cardboard-like staleness, and dulls everything that made it good.
How it got here
American IPA is not a revival of the English style so much as a different beer wearing its name. What made it possible was hop breeding: Cascade, released in 1972, carried a citrus and pine character unlike anything in the English or continental varieties, and the beers built around it had no historical precedent to answer to.
The style hardened into its recognisable form through the 1980s and 1990s in California and the Pacific Northwest, and for two decades it was the beer American craft brewing was judged on.

Common misconceptions
“IPA means a punishingly bitter beer.”
It means a hop-forward one, and where the hops are used decides the bitterness. Late and dry hopping give aroma and flavour with very little bitterness, which is why a New England IPA can carry enormous hop character at a bitterness below many pale lagers. A West Coast IPA is genuinely bitter; a hazy one often is not, and both are IPAs.
How it is made
The steps that shape this style in particular, rather than the ones every beer goes through.
- Whirlpool hopping — Steep hops in wort held below boiling — typically 75–85 °C — to extract aroma compounds with far less isomerisation than a boil addition.
- Dry hopping — Add hops to beer after fermentation, without heat, to extract aroma compounds while adding essentially no bitterness.
- Biotransformation — Add hops during active fermentation so yeast enzymes convert bound hop compounds into aromas the hop could not release on its own.
- Hop creep — Explain the renewed fermentation that dry hopping can start in beer that had already finished, and the over-carbonation and dryness that follow it.
- Wet hopping — Brew with hops that have never been dried, within hours of picking, for a character that does not survive drying.
Questions
Why do IPAs go stale so quickly?
The aroma compounds that define the style are volatile terpenes and thiols, and they degrade with time, heat and oxygen. Bitterness fades more slowly but also softens. Nothing is unsafe about an old IPA — it simply loses the thing you bought it for, and often develops a papery, caramel-like oxidised note.
