A history of beer
54 events that explain something you can still taste — with how well each is attested, and where the story most people know differs from the record.
Why the certainty labels are there
Beer history carries an unusual density of confidently-repeated stories that do not survive contact with primary sources, and the reason is structural: a great deal of the popular account was written by breweries as marketing and then recycled by writers with no reason to doubt it. The historians who went back to the brewing logs and excise records have substantially revised it.
So every event here says how well attested it is, and 6 of them carry the popular version alongside the documented one rather than quietly omitting a story readers arrive holding. Raising a myth without correcting it would be worse than not mentioning it, so the data model refuses one without the other.
Before 1800
Hops displace herbs, legislation starts shaping recipes, and porter becomes the first industrial beer.
1100–1500 Hopped beer spreads across northern Europe
Well attested Over roughly four centuries hopped beer displaced herb-bittered ale across northern Europe, driven as much by tax and trade as by taste.
1516 The Bavarian purity ordinance
Documented Germany. A Bavarian ordinance restricting beer to barley, hops and water, fixing prices and reserving wheat and rye for bread.
1553 Bavaria restricts brewing to the cooler months
Documented Germany. Regulation confining brewing to the period between autumn and spring, which produced both Märzen and the practice of lagering.
1700–1750 Porter emerges in London
Contested United Kingdom. A dark, aged London beer becomes the first mass-market industrial product, though how and when it appeared is disputed.
1780–1840 Pale ale is exported to India
Contested United Kingdom. London and later Burton brewers built an export trade in pale, well-hopped stock ale to India — the trade that gave IPA its name.
The nineteenth century
Pale malt, pale lager, refrigeration and pure yeast culture. More of what beer is now was decided here than in any other period.
1800–1850 Indirect-fired kilning makes pale malt practical
Well attested Drying malt with hot air rather than over an open fire allowed pale, smoke-free malt to be produced at scale.
Documented United Kingdom. A porter vat at the Horse Shoe Brewery failed, releasing hundreds of thousands of litres into the surrounding streets and killing several people.
1817 Daniel Wheeler patents black malt
Documented United Kingdom. A drum-roasting patent that let brewers produce dark beer from a mostly pale grist, changing how porter was made.
1820–1900 Baltic brewers ferment export porter as a lager
Well attested Poland. Brewers around the Baltic reproduced strong British export stout using bottom fermentation and cold maturation, producing a smoother beer of the same strength.
1820–1880 Irish brewers adopt unmalted roasted barley
Well attested Ireland. Malt taxation made unmalted roasted grain the cheaper route to colour and roast, and the resulting sharpness became the defining flavour of Irish stout.
1830–1860 The Burton union system comes into use
Well attested United Kingdom. A linked array of oak casks that continuously separated yeast from fermenting beer, and a large part of the character of Burton pale ale.
1839 The railway reaches Burton upon Trent
Documented United Kingdom. Rail connection allowed an inland town to supply national and export markets, and Burton grew into one of the largest brewing centres in the world.
1842 The first pale bottom-fermented beer is brewed in Plzeň
Documented Czechia. A Bavarian brewer, exceptionally soft local water, pale kilned Moravian malt and Saaz hops produced a beer that reshaped world brewing within a generation.
1860–1900 Vienna lager survives in Mexico
Well attested Mexico. Central European brewers emigrating to Mexico carried the Vienna amber lager tradition with them, and it persisted there after largely disappearing in Austria.
1873 Mechanical refrigeration reaches the brewery
Documented Germany. Carl von Linde’s ammonia refrigeration, first installed in a brewery in the early 1870s, freed lager production from cold cellars and natural ice.
1876 Bass registers the red triangle
Documented United Kingdom. Generally cited as the first trade mark entered under the UK Trade Marks Registration Act, and still one of the most recognisable marks in brewing.
1876 Pasteur establishes that fermentation is microbial
Documented France. Work through the 1860s and 1870s showed that fermentation is caused by living organisms and that beer spoilage is microbial, making deliberate control of both possible.
1883 Hansen isolates a pure yeast culture at Carlsberg
Documented Denmark. Emil Christian Hansen isolated a single yeast strain at the Carlsberg Laboratory, making reproducible lager fermentation possible — and the brewery published the method rather than patenting it.
1892 The crown cap is patented
Documented United States. William Painter’s crown cork gave bottled beer a cheap, reliable, gas-tight seal, and is why beer bottles need no cork.
1894 Munich answers Bohemian pale lager with Helles
Well attested Germany. Munich brewers, losing ground to pale Bohemian beer, produced a pale lager of their own — maltier and less bitter than the beer it responded to.
1900 to 1970
War, prohibition and consolidation narrow what is available almost everywhere, and packaging changes how beer reaches people.
1900–2000 The sparkler divides British cask service
Traditional account United Kingdom. Northern British practice adopted the sparkler and the tight creamy head it produces; southern practice largely did not, and the divide has persisted.
1908 A brewery statistician publishes the t-distribution
Documented Ireland. William Sealy Gosset developed small-sample statistics while working on quality control at a Dublin brewery, publishing as "Student" because his employer treated the work as commercially sensitive.
1914–1950 British beer strength collapses through two wars
Documented United Kingdom. Wartime restriction and gravity-based taxation drove British beer strengths down sharply, and they never returned to nineteenth-century levels.
1920–1933 American Prohibition
Documented United States. Thirteen years of national prohibition destroyed most of American brewing and its regional diversity; the survivors consolidated around light adjunct lager.
1926–2020 The Hüll programme breeds disease-resistant German hops
Documented Germany. A long-running German breeding programme produced successors to wilt-susceptible traditional varieties, and later a generation of aromatic modern ones.
1935 Beer is first sold in cans
Documented United States. Flat-topped steel cans requiring a separate opener went on sale in Richmond, Virginia; aluminium and the integrated tab came much later.
1950–1990 Lambic declines, then is deliberately preserved
Well attested Belgium. Spontaneous fermentation nearly disappeared under competition from sweeter commercial products before a small number of producers deliberately preserved the traditional method.
1955–1975 British brewing consolidates into national groups
Well attested United Kingdom. A wave of mergers produced a small number of national brewers who replaced cask beer with keg products across large tied pub estates.
1956 Westmalle names the tripel
Well attested Belgium. The abbey’s strong pale ale, refined into its modern form in the 1950s, gave an entire Belgian style category its name and its reference example.
1959 Nitrogen dispense is developed for stout
Well attested Ireland. A nitrogen and carbon dioxide blend was developed to give keg stout the soft texture and dense head of well-kept cask beer.
1960–2015 Berliner Weisse declines and is reinvented
Well attested Germany. Berlin’s sour wheat beer nearly disappeared, and the modern revival is largely kettle-soured rather than made by the mixed fermentation of the historical beer.
1965 Fritz Maytag buys Anchor Brewing
Documented United States. A failing San Francisco brewery was bought and rebuilt around traditional methods at the low point of American brewing diversity.
1966 Pierre Celis revives witbier
Documented Belgium. Belgian witbier had ceased to be brewed. A former milkman who had worked at the last wit brewery in Hoegaarden restarted production from memory and historical practice.
1970 to 2000
Consumers push back. Cask beer is defended in Britain, American brewing is rebuilt, and extinct styles are reconstructed.
1971 CAMRA is founded
Documented United Kingdom. Four drinkers founded what became the Campaign for Real Ale, defining "real ale" and organising consumer pressure against keg-only national brewers.
1972 Cascade is released
Documented United States. The USDA breeding programme released a hop whose grapefruit-and-floral character was unlike anything in European brewing.
1978 Homebrewing is legalised in the United States
Documented United States. Federal legislation removed the prohibition on brewing beer at home for personal use, an omission left over from the repeal of Prohibition.
1980 Sierra Nevada Pale Ale goes into production
Documented United States. A Chico brewery built a pale ale around Cascade, and in doing so defined what American hops taste like to the rest of the world.
1980–2020 Southern Hemisphere hop breeding produces a distinct character
Well attested New Zealand. New Zealand and Australian programmes produced varieties whose thiol-driven tropical and white-wine character differs markedly from American hops.
1986 The Kölsch Convention restricts the name to Cologne
Documented Germany. Cologne brewers agreed to restrict the name Kölsch to beer brewed in and around the city, later supported by protected geographical status.
1987 Super Dry reorders the Japanese market
Documented Japan. A highly-attenuated "dry" lager launched in Japan and triggered a market realignment that changed the ranking of the country’s brewers.
1987 The European Court rules on the German purity requirements
Documented Germany. The Court held that Germany could not use its purity rules to bar beer lawfully produced in other member states from being sold as beer.
1989 The Beer Orders break the brewery-pub tie
Documented United Kingdom. Legislation limited how many tied public houses a large brewer could own, restructuring the British market and separating pub ownership from brewing.
1992 Commercial bourbon-barrel ageing begins
Well attested United States. A Chicago brewery aged imperial stout in used bourbon barrels, starting a practice now found worldwide.
1993–2015 Grodziskie dies out and is reconstructed
Documented Poland. Poland’s smoked wheat beer ceased production entirely in the 1990s and was reconstructed two decades later from records and surviving knowledge.
1994–2004 The double IPA emerges
Well attested United States. West Coast brewers pushed IPA to higher strength and far higher hop rates while keeping it dry, establishing a category defined by intensity without sweetness.
1997 The Authentic Trappist Product mark is established
Documented Belgium. The International Trappist Association created a certification mark for goods made within monastery walls under monastic control, with proceeds to the community or charity.
1998 Cask Marque begins accrediting cellar quality
Documented United Kingdom. An independent scheme began inspecting and accrediting the condition of cask beer as actually served, rather than as brewed.
Since 2000
Hop chemistry, haze, barrels and the arrival of alcohol-free beer as something people choose rather than settle for.
2000–2020 Thiol chemistry explains modern hop aroma
Well attested Research identified polyfunctional thiols, perceptible in parts per trillion, as responsible for much of the tropical and blackcurrant character of modern hops — and showed that yeast releases many of them from bound precursors.
2002 Small brewers’ relief is introduced in Britain
Documented United Kingdom. Reduced duty for low-volume producers, widely credited with the subsequent multiplication in the number of British breweries.
2004–2016 The hazy IPA emerges in New England
Well attested United States. Vermont brewers produced a soft, low-bitterness, aroma-driven IPA that inverted the West Coast template and became the dominant modern style.
2006–2020 Gluten-free and gluten-reduced beer diverge as categories
Well attested Beer brewed from naturally gluten-free grain and barley beer treated with enzymes came to be regulated differently, because test methods are unreliable on hydrolysed gluten.
2010–2024 Alcohol-free brewing becomes credible
Well attested Vacuum distillation with aroma recovery, membrane separation and maltose-negative yeasts turned alcohol-free beer from an apology into a category people choose.
2011–2020 Large brewers begin acquiring craft breweries
Documented United States. A sustained wave of acquisitions moved well-known craft breweries into multinational ownership, sharpening the argument about what "craft" means.
2011 The wild parent of lager yeast is identified
Documented Saccharomyces eubayanus, the cold-tolerant parent of lager yeast, was found in Patagonian forests — nearly five centuries after the hybrid began brewing beer.

- Hopped beer spreads across northern Europe — “Hops were adopted because brewers discovered they made beer taste better, and unhopped ale simply died out.”

- Porter emerges in London — “Porter was invented around 1722 by Ralph Harwood of Shoreditch, who created "entire butt" as a single beer replacing a publican’s blend of three.”
- Pale ale is exported to India — “India Pale Ale was invented as an unusually strong, heavily-hopped beer specifically so it would survive the long sea voyage to India, which ordinary beer could not.”
- The sparkler divides British cask service — “One side is serving cask beer properly and the other is doing it wrong.”
- The hazy IPA emerges in New England — “Hazy IPA is simply unfiltered IPA, and the cloudiness is a side effect of not filtering.”
