Industrial brewing
Beer became the first mass-produced consumer product, and the technologies that made that possible — measurement, power, pale malt, rail — also decided which beers survived.

Porter was the first industrial beer
Porter emerged in London in the early eighteenth century, and its significance is structural rather than sensory. It was a dark beer that improved with long maturation, which meant it could be brewed in enormous quantities, stored, blended and supplied consistently to a very large urban market. That is a description of an industry rather than of a recipe.
The scale is hard to picture now. Individual London breweries operated maturation vats holding tens of thousands of barrels; when one failed at the Horse Shoe Brewery in 1814 the resulting flood killed eight people. Capital on that scale, tied up in beer that had to sit for months, is a fundamentally different business from a brewhouse selling into the street.
The origin story usually told — a publican blending three beers into a single "entire" — is a later reconstruction the documentary record does not really support. Porter appears as a distinct commercially brewed beer, and what makes it historically important is the scale it enabled rather than a blending trick.
Measurement changed the recipes
The saccharometer is the least visible and most consequential change of the period. Once John Richardson had published tables in 1784 for reading wort gravity, brewers could see for the first time how much fermentable extract they were actually getting for their malt bill — and the answer overturned received opinion. Brown malt, believed to give more because it was more worked, yields substantially less than pale.
London porter was reformulated onto a pale base with a small proportion of dark malt for colour and flavour, a change made for arithmetical reasons and made practical by Daniel Wheeler’s 1817 patent for high-temperature roasted malt. The beer people drank changed because an instrument made waste visible.
The thermometer spread alongside it, more slowly, and for a related reason: it told brewers what they were doing, where the saccharometer told them what it was costing.
Pale malt made colour a choice
Malt dried over an open fire takes on smoke and colour, so beer had been some shade of brown as a condition of the process rather than as a decision. Fuel that burns clean, and later kilns where hot air rather than flame meets the grain, made genuinely pale malt possible.
Almost every colour-based style distinction dates from after this. Pale ale, pilsner and Helles are all downstream of it; so, less obviously, is modern dark beer, which is made by adding a little very dark malt to a pale base rather than by browning everything.
Rail, and the making of Burton
Beer is heavy, perishable and low-value per tonne, which is close to the worst possible freight. Before rail that arithmetic kept brewing local, and every town of any size had its own brewery — not by preference but by cost.
The railway reached Burton upon Trent in 1839, and an inland Staffordshire town with unusually sulphate-rich well water became the centre of world pale ale brewing, with sidings running into the brewery yards. The water was real and genuinely suits pale hoppy beer; it had also been there for centuries without making Burton famous. What changed was the ability to sell the result to everyone.

A float that measures how much sugar a brewer has extracted — and, by making waste visible for the first time, quietly rewrote British recipes within a generation.

Not the discovery that temperature matters — brewers knew that — but the ability to name a temperature, write it down, and hit it again next week.
- Steam power in the brewery
Milling, pumping and stirring stopped depending on how many men and horses a brewery could keep, which removed the ceiling on how large one could be.
- Indirect kilning and pale malt
Drying malt with heat that never touches it — first over coke, later over hot air — which made genuinely pale malt possible and turned beer colour into a choice.
- Railways and beer distribution
Beer stopped being a local product because it stopped being expensive to move — and a town with the right water could suddenly supply a country.
What people get wrong about this period
- Was IPA invented so beer could survive the voyage to India?
Pale ale really went to India and hops really preserve beer. No style was invented for the voyage, porter made the trip fine, and the name arrived decades later.
- Is stout just a strong porter?
Historically exact — stout was an adjective meaning strong. As a description of the two words today it is wrong, and modern dry stout is often the weaker of the pair.

1830–1860 The Burton union system comes into use
A linked array of oak casks that continuously separated yeast from fermenting beer, and a large part of the character of Burton pale ale.
1839 The railway reaches Burton upon Trent
Rail connection allowed an inland town to supply national and export markets, and Burton grew into one of the largest brewing centres in the world.

Questions
Who invented porter?
No single person, and the familiar story is a later reconstruction. Porter appears in London in the early eighteenth century as a distinct commercially brewed beer; the account of a publican blending three beers into one "entire" is not well supported by the record. Its historical importance is that long maturation made industrial-scale brewing viable, not the manner of its origin.
