Lager and the conquest of cold

Lager was a beer you could only make in cold places at cold times of year, until it was not — and the technology that removed the constraint is why most of the world now drinks it.

Lager is named after storage, and that is the whole story

Bavarian brewers had been fermenting cold and storing beer through the summer in rock cellars for centuries before anything pale existed. *Lagern* means to store; the beer is named after what had to be done to it. Ice was cut from lakes in winter and packed into cellars, and the cellars themselves were cut where the geology allowed.

A Bavarian ordinance from 1553 forbade brewing between spring and autumn. That is often told as quaint regulation and is better read as an admission: warm-weather brewing produced bad and sometimes dangerous beer, and the law codified what brewers already knew. It is also the origin of Märzen — beer brewed in March, at the last legal moment, and stored to last the summer.

What these beers were not was pale. Malt kilned over fire produced dark or amber beer, and no Bavarian brewer of 1700 could have made a golden lager whatever they wanted.

Plzeň, 1842

The town’s burghers had brewing rights and, by the 1830s, beer bad enough to be dumped in the street in protest. Their response was institutional: build a new common brewery and hire a Bavarian brewer, Josef Groll, who brought cold-fermentation technique.

What Plzeň supplied was the rest. Exceptionally soft water, which lets a large Saaz hopping rate read as floral rather than harsh. Pale malt, made possible by English indirect kilning. The combination produced a beer that was golden and brilliantly clear, and nothing had looked like it before.

The reception depended on something outside brewing entirely: cheap glass drinking vessels were reaching ordinary pubs in the same decades. In a pewter pot this would have been a good lager. In a glass it was a category, and within fifty years everybody was trying to make one.

Refrigeration removed the geography

Even after 1842, lager remained a beer of cold places and cold seasons. Carl von Linde’s mechanical refrigeration, developed from the 1870s working directly with Bavarian brewers, turned cold into a utility that could be bought anywhere.

The consequences are the largest of any single technology in brewing. Lager could be made in Madrid, Mexico City, Sydney or Shanghai, year-round, at industrial scale. Combined with pure yeast culture — which made long cold fermentations safe — and with pasteurisation and rail, it produced a beer that could be made anywhere and sold everywhere. That is why most beer brewed today is pale lager, and the reason is closer to engineering than to taste.

When was pilsner invented?

The first pale bottom-fermented beer was brewed in Plzeň in 1842 by Josef Groll. What was new was the combination — Bavarian cold-fermentation technique, English-style pale malt, exceptionally soft Bohemian water and Saaz hops — rather than lager itself, which is centuries older and is named after the cold storage it depends on.
