Indirect kilning and pale malt

Drying malt with heat that never touches it — first over coke, later over hot air — which made genuinely pale malt possible and turned beer colour into a choice.

Before

Malt was dried over a fire and the smoke went into the grain. Every beer was therefore some shade of brown and carried some degree of smoke, not as a style but as a condition of the process. Colour was not something a brewer selected; it was what the fuel and the kiln gave you, and it varied between maltings and between batches. The Bamberg smoked beers are not an exotic invention — they are what ordinary beer used to taste like, kept deliberately after everyone else stopped.

Fuel that burns without much smoke, and later kilns where the hot air rather than the flame meets the grain, made it possible to dry malt pale and clean. Colour became a variable a brewer could set, which is the precondition for pale ale, for pilsner, and — once black patent malt arrived in 1817 — for dark beer made by adding a small amount of very dark malt to a pale base rather than by browning everything. Nearly every style distinction that depends on colour dates from after this.

This is the least glamorous entry on any list of brewing technologies and probably the most consequential. Nothing else on this page changed the range of beers it was possible to make by as much.

Why it spread

Slow, regional and driven by fuel economics rather than by taste. Where coal and coke were cheap the change came early; where wood was cheap it came late or not at all. Pale malt was also more expensive per barrel of beer for a long time, which is why pale beer was a premium product before it was a default one — and why porter, made from cheaper brown malt, was the beer of a city rather than a luxury.

What it displaced: Direct wood-fired kilning, which survives in Bamberg and in a handful of Franconian maltings as a deliberate choice rather than as a necessity.

Coke-fired malt drying is often given a date and a name, and neither survives inspection. Coke was in industrial use for other purposes first, maltsters adopted it unevenly across a long period, and the shift to genuinely indirect kilns came later again. This is a diffusion, not an invention, and BeerHQ names nobody.

Names are attached to this in popular accounts and none of them survives inspection.

What people get wrong

Pale ale was invented when somebody decided to make a paler beer.

The causation runs the other way. Pale malt became available and affordable, and pale beers followed. Before that no brewer could have made a consistently pale beer however much they wanted to.

Smoked beer is an unusual speciality.

It is the survival of the normal case. All malt carried smoke before indirect kilning; Bamberg is where the older method was kept rather than where something odd was introduced.

Why was all old beer dark?

Because malt was dried over a fire and took on smoke and colour from it. Pale malt needs heat that does not touch the grain, which arrived with coke firing and later with indirectly heated kilns. Until then a brewer could make beer darker but not meaningfully paler, so colour was a fact about the fuel rather than a decision about the beer.
