English IPA is a pale ale brewed strong and hopped hard, with the mineral dryness that Burton water gives. Against modern American versions it is maltier, earthier and far less aromatic — the hops are herbal, floral and honeyed rather than citrus and resin.

The style largely disappeared in Britain through the twentieth century as strengths fell, and much of what is sold as IPA in the UK today is closer to a bitter. The revival has been driven substantially by American reinterpretation coming back the other way.

The historical story usually told about this style — invented to survive the voyage to India — is at best a simplification. Beer of many kinds reached India successfully, and the higher hopping and strength were a preservation practice applied to an existing export trade rather than an invention for it. What is true is that hops and alcohol both act as preservatives, and that is why the beer was made that way.

As a drink it is a very different thing from its American descendant: earthy, marmalade-like English hop character over a firm biscuity malt base, balanced rather than lean, and much less dependent on freshness. A good one has enough malt to stand up to the bitterness, which is precisely what the American style removed.

Freshness and storage

English IPA shows best within 2–5 months of packaging. After that it declines in quality rather than becoming unsafe.

Drink fresh. Buy it as young as you can and drink it soon. What makes this beer worth drinking is the first thing to leave it.

  • A delicate beer with a short window. What makes it good is cleanliness and definition, which are the first things to blur.

What changes with time

  • Flavour decline. The beer is still perfectly sound, but the most volatile parts of its character have faded. Weeks to a few months, fastest in heavily dry-hopped beer.
  • Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

How it got here

Pale ale brewed strong and kept long was a London and Burton practice before anyone associated it with India. Hodgson’s Bow brewery is the name most often attached to the early East India trade, largely because of its proximity to the docks and its credit terms with the ships’ officers rather than any recipe it held.

Burton’s dominance came later and had a physical cause: the water. Its high sulphate content suited pale, bitter beer in a way London water did not, and once the railways made the trade practical, Burton brewers took the export market and then the domestic one with it.

The usual account is disputed. The popular account — that the style was invented to survive the voyage to India, and that hops and strength were raised for that purpose — does not match the brewing records. Pale, heavily-hopped stock ales were already being made for the domestic trade, and beer of every kind was shipped east, including porter. What the India trade did was make one existing beer famous.

Common misconceptions

IPA was invented so beer could survive the voyage to India, by adding extra hops and alcohol.

The story is much repeated and substantially wrong. Beer of many styles was already being shipped to India successfully, including porter, which arrived in good condition. Heavily hopped pale "October beer" was an established English style brewed for long keeping well before the India trade, and it was adapted for export rather than invented for it. The name "India Pale Ale" appears in print only from the 1830s, decades after the trade began. Hops do have genuine antimicrobial properties, so that part is real — but the beer was not created for the voyage.

    The confident round figures given for historic brewing city water profiles are much shakier than their presentation suggests, and how seriously to take them is genuinely argued.

    The figures are widely reproduced across brewing literature and are useful as a description of relative character between cities.

    They typically derive from single nineteenth-century analyses of one source, while cities drew from multiple wells of differing chemistry and brewers treated their water before use — so they describe a supply rather than what went into a mash.

  • The story that India Pale Ale was invented as a strong, heavily-hopped beer specifically to survive the voyage to India does not survive contact with the brewing and shipping records, though the beer genuinely was brewed for that export trade.

    The popular account: a brewer devised an unusually strong and heavily hopped pale ale so that it would survive a long sea voyage that ordinary beer could not.

    The documented account: pale, well-hopped stock ales already existed and were already being exported; porter and other beers also travelled to India successfully; and the beers sent were not consistently stronger than domestic equivalents. What was distinctive was the export trade and its marketing, not a single invention.

    The strength of the claim that a city’s water determined its beer style is contested: the correlation is real, but the causal account is weaker and more contingent than the way it is usually stated.

    The conventional account: Burton’s gypsum-rich water made pale ale possible there and Dublin’s alkaline water made stout the practical choice, so water determined regional style.

    The qualified account: brewers worked with the water they had and selected recipes that survived it, which is selection rather than determination. Water treatment, and Burtonisation in particular, severed the link entirely once available — any brewery could then reproduce any profile.
