Faded hop character
The specific staling of hop character: the aroma fades first, and badly stored hops can turn cheesy.

What it tastes and smells like
Responsible compound: isovaleric acid from degraded beta acids.
Hop aroma compounds are volatile and start disappearing from the moment a beer is packaged. In a hazy IPA meaningful fade is measurable within weeks; in a bitter it takes months.
Separately, hops stored warm and exposed to air oxidise, and their beta acids degrade to isovaleric acid — the compound behind stale cheese and sweaty socks. That is a raw-material problem rather than a finished-beer one.
Where it may be expected
Lambic brewing uses deliberately aged, oxidised hops at high rates, specifically because they have lost their aroma and bitterness while retaining antimicrobial activity. What is a fault everywhere else is a requirement there.
Intensity and context decide. In the styles below a restrained version of this can be part of the character; the same character running past that is still a fault there.
Styles this tends to affect
Not where it belongs — where it is most likely to appear when something has gone wrong.
- Alcohol-free IPA — An alcohol-free beer built around heavy dry hopping, since hop aroma is added after fermentation and survives the process intact.
- American amber ale — Caramel malt depth meeting American citrus hops — the maltier counterpart to American pale ale.
- American barley wine — A strong malt-dense ale with assertive American hop bitterness and citrus-pine aroma alongside the caramel depth.
- American IPA — The defining modern craft beer: intense citrus, tropical and resinous hop aroma over a lean malt base, finishing firmly bitter.
- American pale ale — The beer that defined American craft brewing: clean pale malt under bright citrus and pine hop character, balanced rather than extreme.
- American porter — A stronger, more assertive porter with deeper roast, firmer bitterness and often American hop character.
- American stout — A bold, hop-forward stout combining strong espresso roast with American citrus and pine hop character.
- Belgian IPA — American hop intensity fermented with expressive Belgian yeast, producing pepper and fruit alongside citrus and pine.
- Black IPA — An IPA with dark malt for colour and a light roast edge, keeping full citrus and pine hop character.
- British golden ale — A modern British cask style: pale, crisp and citrus-hopped, developed to win drinkers back from lager.
- Cold IPA — A lean, dry IPA fermented with lager yeast at higher temperature, using maize or rice to strip body and expose hop aroma.
- Double IPA — IPA scaled up: more strength, more hops and more bitterness, while staying dry enough to remain drinkable.
- English IPA — The original IPA: a strong, firmly bitter English pale ale with earthy, floral hop character and a dry, mineral finish.
- India pale lager — A lager hopped at IPA intensity: clean cold fermentation carrying bright American hop aroma and firm bitterness.
- Milkshake IPA — A hazy IPA with lactose and fruit added for sweetness and a fuller, creamier body.
- Red IPA — An IPA built on caramel and amber malt, where toffee depth sits underneath full American hop character.
- Session IPA — IPA hop intensity at a strength you can drink several of — lean, dry and aromatic, with the malt kept minimal.
- West Coast IPA — The dry, clear, aggressively bitter interpretation of American IPA, built on pine and grapefruit with the malt stripped right back.
- White IPA — A hybrid of witbier and IPA: wheat and Belgian yeast spice underneath American hop aroma.
If you are drinking it
If an IPA smells of very little, it is probably old rather than badly made. Check the packaging date — hop-forward beer is meaningfully diminished after two or three months, and much faster if it has been warm.

Not a safety issue. Beer’s alcohol, hop compounds and low pH make it inhospitable to organisms that cause illness.
