Forced ageing test
Hold packaged beer warm for a fixed period to accelerate staling, predicting in days how it will taste after months on a shelf.
What is actually happening
Because staling reactions roughly double in rate for every 10 °C, a week at 30 °C approximates several months at ambient. Comparing a forced sample against a cold-stored control reveals how much oxygen the packaging line let in.
It is a comparative tool rather than a precise predictor: the acceleration is not uniform across every reaction, so it exaggerates some changes relative to others.

What goes wrong here
Risks rather than certainties. This step does not cause these faults; getting it wrong can.
- Oxidation — The universal ageing fault: oxygen degrades beer into papery, cardboard-like staleness, and dulls everything that made it good.
