Beer and food pairing

230 dishes, each scored on the attributes that decide a pairing — fat, salt, heat, sweetness, acidity and weight. Every recommendation names the mechanism, so it teaches you something you can use on the next meal.

How pairing works

  • Complement. Beer and food share a flavour, so each reinforces the other — roasted stout with charred beef.
  • Contrast. Opposing characters hold each other in balance — a tart, high-acid beer against something rich and fatty.
  • Bridge. A third element links the two: a spice, a herb or a caramelised note present in both the dish and the beer.
  • Cut. Bitterness, acidity or carbonation slices through fat and oil so the next mouthful tastes fresh again.
  • Cleanse. Carbonation and a dry finish scrub the palate between bites, which is what makes crisp lager so forgiving at the table.
  • Amplify. The pairing deliberately intensifies something — usually sweetness with sweetness in dessert matches. Powerful and easy to overdo.
