Oxidation

The universal ageing fault: oxygen degrades beer into papery, cardboard-like staleness, and dulls everything that made it good.

Also called staling, cardboard, papery, wet cardboard.

Oxidation is not one flavour but a family of them, and how it presents depends on the beer. In a pale hoppy beer it shows first as loss — the aroma simply goes — then as cardboard and a dull sweetness. In a dark strong beer the same process produces sherry, leather and dried fruit, which is why some styles improve with age and most do not.

Temperature is the multiplier. Staling reactions roughly double in rate for every 10 °C, so a beer kept warm for a month can age as much as one kept cold for several.

Where it may be expected

In strong, malt-dense and deliberately aged beers, controlled oxidation produces sherry, leather and dried-fruit complexity that is the reason to cellar them. The distinction is the character it produces: sherry and dried fruit in a barley wine is development; wet cardboard in a pale ale is staling. Papery notes are a fault in any style.

Intensity and context decide. In the styles below a restrained version of this can be part of the character; the same character running past that is still a fault there.

If you are drinking it

If a beer tastes of wet cardboard or paper, or simply of much less than it should, it is stale. It is not unsafe — just past its best. A retailer will usually replace beer sold well past its date. Buy hop-forward beer fresh and keep everything in the fridge.

  • Store beer cold and dark, and drink hop-forward styles as close to packaging as possible. Check the date on the can before buying. (prevents)
  • Nothing recovers an oxidised beer. Once the cardboard note is present it cannot be reversed. (cannot be reversed)

Not a safety issue. Beer’s alcohol, hop compounds and low pH make it inhospitable to organisms that cause illness.

  • Barrel ageingMature beer in wooden barrels for the wood and spirit character they contribute, or for the microflora they harbour and the slow oxygen exchange they allow.
  • Cask breatherAdmit carbon dioxide at atmospheric pressure to replace beer drawn from a cask, instead of letting air in.
  • Cask conditioningComplete fermentation and carbonation inside the cask the beer will be served from, so it arrives at the drinker alive.
  • Dry hoppingAdd hops to beer after fermentation, without heat, to extract aroma compounds while adding essentially no bitterness.

Does beer go off?

It goes stale rather than off. Beer is very inhospitable to anything that could make you ill, so old beer is not dangerous. What it does is lose aroma and develop papery, cardboard-like staling notes. A hop-forward IPA is noticeably diminished within a few months; a strong dark beer may improve for years.
