Kölsch is fermented warm with ale yeast and then conditioned cold like a lager. The result is delicate — clean and crisp, but with a faint white-wine fruitiness that a true lager would not have.
The Kölsch Konvention restricts the name to beer brewed within the Cologne area to an agreed specification, making it one of very few beer styles with genuine geographic protection. Beer brewed elsewhere to the same recipe is legitimately made but cannot use the name in the EU.
It is traditionally served in a stange — a small straight 200 ml glass — and replaced continuously by the waiter until the drinker puts a beermat on top.
The small glass is not a quirk but a consequence: Kölsch is delicate and loses condition quickly once poured, so it is served in quantities small enough always to be fresh. It is also one of the hardest beers to hide anything in — a good one is soft, clean and quietly fruity, and any sulphur, harshness or staleness is immediately obvious.

Freshness and storage
Kölsch shows best within 1–3 months of packaging. After that it declines in quality rather than becoming unsafe.
Drink fresh. Buy it as young as you can and drink it soon. What makes this beer worth drinking is the first thing to leave it.

What changes with time
- Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

- Keg — No light can reach the beer, so lightstrike is impossible in this format.
- Brown glass bottle — No format-specific concerns beyond the general advice above.
- Aluminium can — No light can reach the beer, so lightstrike is impossible in this format.
Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

The caramelised crust is the point, and Kölsch's clean malt and soft fruit meet it without competing with the delicate flesh.

Faults to watch for
- Oxidation — The universal ageing fault: oxygen degrades beer into papery, cardboard-like staleness, and dulls everything that made it good.
- Lightstrike — Light breaks down hop compounds into a thiol chemically close to skunk spray — the fastest fault in beer, and entirely preventable.
- Acetaldehyde — A green-apple note indicating beer served before fermentation finished — the classic sign of a rushed product.
How it got here
Kölsch is defined by agreement rather than by tradition alone. Cologne’s brewers signed a convention in 1986 setting out what the beer is and, more importantly, who may call it that — it must be brewed in or around the city — and the term subsequently gained EU protected status.
The beer itself is a compromise between the city’s ale tradition and the lager that threatened it: warm-fermented with ale yeast, then cold-conditioned like a lager. The service ritual, in small cylindrical glasses replaced continuously until the drinker signals otherwise, is part of what the convention protects.

Common misconceptions
“Kölsch is a lager, because it is pale, clean and crisp.”
It is warm-fermented with ale yeast and then cold-conditioned like a lager, which is why it reads as clean without being one. The category BeerHQ files it under is hybrid for exactly this reason. The same is true of Altbier from Düsseldorf and of California common, all of which cross the ale and lager process line in one direction or the other.

On Acetaldehyde
Acetaldehyde is a normal intermediate in alcoholic fermentation that yeast converts onward to ethanol, so its presence in finished beer generally indicates the beer left the yeast before fermentation and clean-up were complete.
