Also known as international lager, euro lager, standard lager.

This is the most-produced beer style in the world, and it is a descendant of Bohemian pale lager with most of the character engineered out — lighter in body, far less hopped, frequently brewed with maize or rice to lighten it further, and optimised for consistency across enormous production volumes.

It is easy to be dismissive, and much beer writing is. But the style is genuinely difficult to brew: there is nothing in it to mask a flaw, and producing millions of hectolitres that taste identical is a real technical achievement. What it is not is a beer that rewards attention.

What separates a good example is freshness and restraint rather than intensity: it should be clean, cold, faintly bready and completely free of off-flavours, with just enough bitterness to finish. Because there is so little flavour to hide behind, staleness and lightstrike show immediately — which is why the same brand can taste fine from a busy tap and unpleasant from a warm clear bottle.

Freshness and storage

International pale lager shows best within 3–6 months of packaging. After that it declines in quality rather than becoming unsafe.

Drink fresh. Buy it as young as you can and drink it soon. What makes this beer worth drinking is the first thing to leave it.

  • A delicate beer with a short window. What makes it good is cleanliness and definition, which are the first things to blur.

Very vulnerable to lightstrike, and frequently sold in green or clear glass. The skunky note many drinkers associate with certain imported brands is this fault, not a house character.

What changes with time

  • Lightstrike. The skunky note that develops when beer is exposed to light through inadequate packaging. Minutes in direct sun; days to weeks under shop lighting.
  • Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

In the package

  • Aluminium canNo light can reach the beer, so lightstrike is impossible in this format.
  • Brown glass bottleNo format-specific concerns beyond the general advice above.
  • Green glass bottleLight reaches the beer through this glass. Keep it in the dark, and be wary of bottles that have sat under shop lighting.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

Characteristics that may be expected here

Each of these is treated as a fault in most beer, and in this style it can be part of the character. Intensity and context decide which: a trace that suits the style and an obvious, dominating version of the same thing are not the same finding. DMS

A very low level of DMS is considered acceptable and even characteristic in some pale lagers, where it contributes a faint sweetcorn note to the malt profile. Anything obviously vegetal is a fault in every style.

Detectable from roughly 0.03–0.1 ppm.

Faults to watch for

  • LightstrikeLight breaks down hop compounds into a thiol chemically close to skunk spray — the fastest fault in beer, and entirely preventable.
  • DMSA cooked-vegetable note from a malt precursor that a vigorous open boil should have driven off.
  • OxidationThe universal ageing fault: oxygen degrades beer into papery, cardboard-like staleness, and dulls everything that made it good.

How it got here

The international pale lager is what the Pilsen model became once it was brewed everywhere at industrial scale: lighter in body, lower in bitterness, and typically brewed with rice or maize alongside barley for a cleaner, drier finish and lower cost.

Consistency was the point. The style was shaped by the requirements of national and then global distribution — a beer that tastes the same in every market, brewed under licence in dozens of countries — and it is by a wide margin the most-drunk beer style in the world.

Common misconceptions

Lager is a type of beer, like ale.

Lager describes a process — cold fermentation with bottom-cropping yeast, followed by extended cold conditioning — not a flavour or a colour. Lagers run from near-colourless to black and from 3% to 14% ABV. Schwarzbier and Helles are both lagers and share almost nothing visually.

Adjuncts like maize and rice are cheating or a sign of low quality.

They are a legitimate brewing choice with a specific effect: they lighten body and colour while raising fermentability. They are also cheaper than malt, so they are often used for cost, but the presence of maize does not by itself make a beer bad — several respected traditional styles use it deliberately.

Why does imported lager sometimes taste skunky?

That is lightstrike. Ultraviolet and blue light break down hop-derived iso-alpha acids into a compound chemically close to the one skunks produce, and the reaction takes minutes in direct sunlight. Green and clear glass barely protect against it; brown glass and cans do. It is a storage fault, though some brands have become so associated with it that drinkers expect the flavour.
