Pale lager

American lager

A very light, highly attenuated pale lager brewed with a substantial proportion of maize or rice, prioritising drinkability and cold service.

Also known as American adjunct lager, American light lager.

Almost everything about American lager is a consequence of maize or rice making up a large share of the grist. Those adjuncts ferment out almost completely, so the beer finishes at 80–88% apparent attenuation with very little residual sugar and very little malt flavour left to carry. What remains is carbonation, a faint grain sweetness and a clean cold finish — which is the point rather than a failure, and is why the style is built for volume and cold service rather than for contemplation.

It is also the hardest kind of beer to hide anything in. At 10 IBU and almost no malt character there is nothing to mask a process fault, so the large brewers producing it run some of the tightest quality control in the industry. Judge it against International pale lager rather than against a craft pale ale: the difference between the two is a little more malt presence and a slightly fuller body, not a difference in intent.

Freshness and storage

American lager shows best within 3–5 months of packaging. After that it declines in quality rather than becoming unsafe.

Drink fresh. Buy it as young as you can and drink it soon. What makes this beer worth drinking is the first thing to leave it.

  • A delicate beer with a short window. What makes it good is cleanliness and definition, which are the first things to blur.

With so little flavour to lose, staling shows quickly as a cardboard or papery note.

What changes with time

  • Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

In the package

  • Aluminium canNo light can reach the beer, so lightstrike is impossible in this format.
  • Brown glass bottleNo format-specific concerns beyond the general advice above.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

Characteristics that may be expected here

Each of these is treated as a fault in most beer, and in this style it can be part of the character. Intensity and context decide which: a trace that suits the style and an obvious, dominating version of the same thing are not the same finding. DMS

A very low level of DMS is considered acceptable and even characteristic in some pale lagers, where it contributes a faint sweetcorn note to the malt profile. Anything obviously vegetal is a fault in every style.

Detectable from roughly 0.03–0.1 ppm.

Faults to watch for

  • DMSA cooked-vegetable note from a malt precursor that a vigorous open boil should have driven off.
  • OxidationThe universal ageing fault: oxygen degrades beer into papery, cardboard-like staleness, and dulls everything that made it good.

How it got here

German immigrant brewers brought lager to the United States in the mid-nineteenth century and found the local six-row barley too high in protein to give a clear, stable beer on its own. Maize and rice solved that, and became defining rather than incidental.

Prohibition then removed most of the country’s breweries. What survived and consolidated afterwards was a lighter, less bitter reading of the style than what preceded it, and that is the beer the name now describes.
