Czech pale lager is the everyday version of the beer Plzeň made famous — lower in gravity than Czech premium pale lager and brewed for volume drinking rather than for export. It keeps the soft water, the Saaz character and the decoction-derived malt depth, at a strength that makes several glasses reasonable.
Do not read the lower gravity as a lesser beer. Czech drinking culture treats this desítka as the standard pour and the stronger dvanáctka as the occasional one, which is close to the opposite of how strength is read in Britain or the United States. The style rewards freshness and a proper pour more than almost anything else on the shelf.
Czech beer is conventionally sold in two strengths, described by original gravity in degrees Plato. Výčepní, around 10°, is the everyday draught beer; ležák, around 12°, is the premium one. The distinction is about strength and price, not quality, and a well-made 10° is one of the most drinkable beers in existence.

Freshness and storage
Czech pale lager shows best within 2–4 months of packaging. After that it declines in quality rather than becoming unsafe.
Drink fresh. Buy it as young as you can and drink it soon. What makes this beer worth drinking is the first thing to leave it.
- A delicate beer with a short window. What makes it good is cleanliness and definition, which are the first things to blur.
The delicate Saaz aroma is the first thing to go. Czech tank beer exists specifically to serve it unpasteurised and fresh.
What changes with time
- Flavour decline. The beer is still perfectly sound, but the most volatile parts of its character have faded. Weeks to a few months, fastest in heavily dry-hopped beer.
- Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.
- Lightstrike. The skunky note that develops when beer is exposed to light through inadequate packaging. Minutes in direct sun; days to weeks under shop lighting.
In the package
- Aluminium can — No light can reach the beer, so lightstrike is impossible in this format. Very low oxygen ingress, which matters for a beer this dependent on hop aroma.
- Brown glass bottle — No format-specific concerns beyond the general advice above.
- Green glass bottle — Light reaches the beer through this glass. Keep it in the dark, and be wary of bottles that have sat under shop lighting.
- Keg — No light can reach the beer, so lightstrike is impossible in this format. Very low oxygen ingress, which matters for a beer this dependent on hop aroma.
Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.
Guidance, not an expiry date. How a beer is stored matters more than the date printed on it, and staling roughly doubles in rate for every 10 °C. See storage and freshness for the full model.
What to eat with it
- Hot pot
The distinction the engine cannot see is time. A hot pot is eaten for an hour and capsaicin accumulates, so a beer that suits the first bowl can be unbearable by the fourth. Low strength, low bitterness and served very cold is the only thing that survives to the end of the table.
- Pierogi
Starch inside starch, finished in butter, with no acidity or crunch to break it up. A light Czech lager keeps the palate moving without adding to the weight, and it is what the dish is drunk with across the region for exactly that reason.
- Mapo tofu
Sichuan pepper numbs the palate to fine detail while the chilli builds real heat, so subtlety in a beer is wasted and bitterness is actively unhelpful. Something cold, low in alcohol and quiet is the honest recommendation.
- Spicy food

Each of these is treated as a fault in most beer, and in this style it can be part of the character. Intensity and context decide which: a trace that suits the style and an obvious, dominating version of the same thing are not the same finding. Diacetyl
A low level of diacetyl is traditionally tolerated and by some brewers considered characteristic in Czech pale lager, where it adds a rounded, slightly creamy note. German brewing treats the same compound as a straightforward defect. This is a difference of tradition rather than chemistry — and in every other style, obvious butter is a fault.
Detectable from roughly 0.01–0.15 ppm. Threshold varies substantially between individuals; some tasters are effectively blind to it.

Czech pale lager does not have a separate history of its own. It is a reading of Czech premium pale lager, and that is where the account belongs — repeating it here would be a second copy of one story.
How it is made
The steps that shape this style in particular, rather than the ones every beer goes through.
- Decoction mash — Raise a mash to its next temperature step by removing part of it, boiling that portion and returning it — the traditional continental method.
- Diacetyl rest — Raise a fermentation’s temperature near its end so the yeast reabsorbs and reduces the diacetyl it produced earlier.
- Lagering — Store beer cold for an extended period after fermentation to clarify it and produce the clean, rounded character lagers are named for.

On Decoction mash
Whether decoction mashing produces a malt character that a well-executed step mash with modern malt cannot is genuinely disputed within the trade.
— Many traditional brewers and a substantial body of brewing literature hold that boiling part of the mash develops melanoidin character that cannot be reproduced otherwise.
— Several breweries historically associated with decoction have moved to step mashing without their beers being widely reported as diminished, and blind comparisons have not established a consistent difference.
The practical justifications for decoction — hitting temperature steps without a thermometer, working with undermodified malt — have both disappeared. What remains contested is whether the flavour justification stands alone.
