Why does mass-market lager taste so different from Czech lager?

The short answer

The mass-market version is a descendant of the Czech original with most of the character engineered out: lighter in body, far less hopped, frequently brewed with maize or rice, and optimised for consistency at enormous volume. The Czech original keeps full pilsner malt, decoction mashing, heavy Saaz hopping and long lagering.
