Pasteurisation of beer

Heating packaged beer enough to kill what would spoil it — the technology that let beer be sold a long way from where it was made, at a cost to how it tastes.

Before

Packaged beer was alive and had a short and unpredictable commercial life. A brewery could sell locally, or it could sell further away and accept that some proportion of what arrived would be sour. Bottled beer was a premium product partly because so much of it was lost.

After

Heat treatment — beer held briefly at around 60 °C, either in the sealed package or in flow before filling — gives a shelf life measured in months rather than weeks. That is the precondition for national distribution, for export, for supermarket retail, and therefore for the brewery consolidation that followed. The cost is real and is why the technique is not universal: heat produces a detectable cooked or bready note, flattens hop aroma, and accelerates staling reactions.

Why it spread

Standard for mass-market packaged beer and deliberately avoided by much of the rest of the trade. Cask ale cannot be pasteurised and remain cask ale, tank beer in Czech bars is sold precisely on being unpasteurised, and many modern breweries sterile-filter or simply keep beer cold instead. It is a distribution technology, so breweries that do not need distribution do not need it.

Pasteur patented heat treatment for beer in the 1870s, and his work on it predates the more famous application to milk. The name is correctly attached here.

What people get wrong

All commercial beer is pasteurised.

A great deal is not. Cask ale never is, Czech tank beer is sold on not being, most keg beer in many markets is sterile-filtered instead, and canned beer from small breweries is frequently neither. Pasteurisation solves a distribution problem, and breweries without that problem skip it.

Does pasteurisation change how beer tastes?

Yes, measurably. Holding beer at around 60 °C produces a slight cooked or bready character, reduces hop aroma and speeds up the reactions that make beer taste stale later. That is the trade a brewery makes for months of shelf life instead of weeks, and it is why breweries that do not need long distribution generally do not pasteurise.
