Fermentation understood as biology
The shift from knowing that yeast works to knowing what yeast is — which made spoilage a problem with causes rather than a run of bad luck.
Before
Brewers had used yeast deliberately for millennia and had seen it under a microscope since the seventeenth century. What was missing was the causal claim. The dominant chemical view held that fermentation was a decomposition that yeast accompanied rather than performed, so there was no reason to think of spoilage as an infection, no reason to boil equipment, and no framework in which to ask why a brewery’s beer had gone wrong.

Once fermentation is understood as the work of living organisms, everything downstream follows: contamination is a thing that can be prevented, cleaning is a technique rather than a courtesy, spoilage organisms can be identified and designed against, and yeast becomes something to select rather than merely to keep. Pasteur’s brewing work was funded and framed commercially — the *Études sur la bière* is a book about making beer that does not go off — and it produced both this framework and the heat treatment that carries his name.

Why it spread
The ideas were adopted faster than the practices. Breweries accepted the biology reasonably quickly and were much slower to change cleaning regimes and plant design, because those cost money and the benefit only shows up as an absence of disasters.
Who is credited
Conventionally credited, and the credit is usually stated far too broadly. Pasteur did not discover yeast, did not discover that yeast ferments, and was wrong about the cause of the lager spoilage Hansen later diagnosed. What is genuinely his is establishing that fermentation is a biological process performed by living cells, against a strong chemical consensus, and turning that into a practical programme for brewers.
