The technologies that changed beer
Most of this was not invented for brewing, and almost none of it arrived as news. What each one has in common is that you can taste the difference either side of it.
How to read this
Every record answers the same two questions: what brewing was like without this, and what it made possible. How the techniques themselves work is on the brewing process pages — repeating that here would be writing the same page twice.
Each also records how it was adopted, which is usually the more interesting half. The popular account of brewing technology is a list of inventions; the real story is a list of adoptions, and adoption is driven by money. The saccharometer spread fast because it showed brewers they were wasting malt. The thermometer sat available for decades because nobody could see what it was worth.
Malting and heat
The least glamorous entry on any such list, and the one that changed the most.
Measurement
Naming a number is what made brewing teachable — and what made waste visible.

Not the discovery that temperature matters — brewers knew that — but the ability to name a temperature, write it down, and hit it again next week.
- The saccharometer
A float that measures how much sugar a brewer has extracted — and, by making waste visible for the first time, quietly rewrote British recipes within a generation.
Power and plant
Nothing here improves the beer. What it changes is how much of it one company can make.
Biology
Fermentation stops being something that mostly works and becomes something understood.

The shift from knowing that yeast works to knowing what yeast is — which made spoilage a problem with causes rather than a run of bad luck.
- Pure yeast culture
Growing a brewery’s yeast from one isolated cell, which turned fermentation from something that mostly worked into something that could be relied upon.
Cold
The single technology most responsible for what the world actually drinks.
Stabilisation
Making beer survive the journey, and what that costs it.
- Pasteurisation of beer
Heating packaged beer enough to kill what would spoil it — the technology that let beer be sold a long way from where it was made, at a cost to how it tastes.
- Filtration and bright beer
Removing yeast and haze mechanically, which made beer look the way glassware had just made people expect it to look — and made it stop changing in the bottle.
Packaging
How beer stopped being something you went out to drink.
- Industrial glass bottling
Bottles moved from a hand-blown luxury to a machine-made commodity, and beer became something you could buy for the house rather than only in a pub.
- The crown cork
A crimped metal disc with a cork liner — an unglamorous object that solved the problem every previous bottle closure had failed at, and has barely changed since.
- The beer can
A package that keeps out all light and nearly all oxygen, spent fifty years being regarded as the cheap option, and is now what careful breweries choose.
Distribution
Beer is terrible freight. When that stopped mattering, brewing centralised.
Dealcoholisation
The newest entry, and the one that changed a category people had written off.
