The brewing thermometer
Not the discovery that temperature matters — brewers knew that — but the ability to name a temperature, write it down, and hit it again next week.
Before
Brewers controlled mash temperature carefully and had done for centuries, using methods that worked: the time steam took to clear from the surface, whether a face reflected in the liquor, how long the water stood after boiling. These are repeatable within one brewery, by one experienced person, and they transfer to nobody. A brewer could not write down what they did in a form another brewer could follow, and could not tell whether a bad batch differed from a good one by two degrees or by ten.

A number. That sounds small and is not: it makes a mash schedule communicable, makes deviation detectable, and makes the relationship between temperature and the character of the finished beer investigable rather than merely felt. It is the precondition for brewing being taught rather than apprenticed, and for a large brewery producing the same beer on two sites.

Why it spread
Slower than its usefulness suggests, and the reason is instructive. A thermometer tells a brewer what they are doing but not what they should be doing, and an experienced brewer already had methods that worked. It became indispensable only alongside the saccharometer, which turned measurement into money — at which point the two spread together.
Who is credited
Combrune published on the use of the thermometer in brewing in the 1760s and is conventionally credited with introducing it to the trade. Whether he was first to use one is not established — he is first to write about it at length, which is a different claim, and the distinction is exactly the kind this field exists to keep.

What people get wrong
Before thermometers, brewers had no temperature control.
They had good control and no vocabulary for it. The traditional methods were genuinely effective and entirely untransferable, which is a different problem and the one the thermometer solved.

What did the thermometer change in brewing?
It made temperature communicable. Brewers already controlled their mash well, by eye and by experience, but they could not write down what they did in a way anyone else could repeat, or tell whether a failed batch was two degrees out or ten. Naming the number is what made brewing teachable and made consistency across sites possible.
