Steam power in the brewery

Milling, pumping and stirring stopped depending on how many men and horses a brewery could keep, which removed the ceiling on how large one could be.

Before

Grinding malt, lifting liquor and moving wort between vessels were done by muscle — human, equine, and in some places water power. All three impose a hard limit on scale, and the limit is not gradual: a brewery could grow until the horse wheel could no longer keep up and then it stopped. London porter breweries were already straining against this by the later eighteenth century.

After

A steam engine does not tire, does not need feeding when idle, and can be made larger. The immediate effects were unglamorous — mills, pumps, hoists — and the consequence was not: breweries could be built at a size that had previously been impossible, in cities, close to their market. Porter was the first beer made at that scale, and the economics of very large vessels and long maturation follow from it.

Why it spread

Concentrated where capital already was. A steam engine was a large fixed investment that only repaid itself at volume, so it widened the gap between the great urban porter breweries and everybody else rather than lifting the whole trade — an early instance of a pattern that recurs through this list.

Steam engines were installed in London brewing from the 1780s, Boulton & Watt supplying several of the large porter houses. The engine is not a brewing invention and nobody in brewing claims it; what belongs to brewing is the use.

Steam power made beer better.

It made beer bigger. Nothing about a steam-driven mill improves what is in the glass; what it changes is how much of it one company can make, and therefore who is in the market at all.
