Also known as porter, brown porter.

Porter emerged in early eighteenth-century London and became the first beer brewed at industrial scale. Its modern form is considerably lighter than the historical one, which was aged for months in vats and carried a degree of acidity and Brettanomyces character that would now read as a fault.

Compared with stout, porter is generally softer and more chocolatey, with the roast character rounder and less sharp — though the boundary is genuinely blurred and always has been.

Porter is built on chocolate malt rather than the roasted barley of a dry stout, and that is the single distinction that matters most on the palate: chocolate malt is malted before roasting, which gives a rounder, sweeter, cocoa-like character instead of a sharp coffee bite.

Modern porter is a revival rather than a survival — the style largely disappeared in Britain during the twentieth century and was rebuilt from historical records and brewer's judgement from the 1970s onward. A good one is smooth and moderate, with the roast supporting the malt rather than dominating it, and is far more drinkable than its colour suggests.

Freshness and storage

English porter shows best within 3–8 months of packaging. After that it declines in quality rather than becoming unsafe.

No benefit from keeping. Sound for its window and then slowly less good. Nothing bad will happen quickly, but nothing good happens either.

What changes with time

  • Oxidation. Reaction with oxygen, producing wet cardboard and sherry notes in pale beer and dark-fruit depth in strong dark beer. Months to years, depending on packaged oxygen and temperature.
  • Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

Faults to watch for

How it got here

Porter was the first beer brewed at industrial scale, and much of what a modern brewery is follows from it: it kept well, so it could be aged in enormous vats and sold far from where it was made, and the capital that made it profitable concentrated London brewing into a handful of very large firms.

Its character changed twice over. The introduction of black patent malt in 1817 let brewers get the colour from a small proportion of intensely roasted malt rather than from brown malt throughout, which changed both the flavour and the economics. The style then declined through the twentieth century in Britain to the point of near-extinction, and what is brewed now largely descends from its American revival.

The usual account is disputed. The familiar story — that porter was invented in 1722 by a brewer named Harwood to replicate a three-way blend called "three threads" — comes from an account written decades after the fact and is not supported by contemporary records. Historians working from brewing logs and excise records describe a gradual development of London brown beer rather than an invention.

Common misconceptions

Porter and stout are two clearly different styles.

The line between them has never been firm. Stout began as an adjective — stout porter meant the stronger version of the same beer — and the two only separated gradually. Modern usage is a convention rather than a definition: brewers put either word on beers that overlap in strength, colour and roast, and the Irish reading of stout differs from the English reading more than porter and stout differ from each other.

What is the difference between porter and stout?

Less than most people expect, and the boundary is contested. "Stout" started as an adjective meaning strong — a stout porter was a brewery’s strongest porter — and only became a separate category over the nineteenth century. In modern usage porter tends to be softer, sweeter and more chocolatey, while stout tends to be drier and sharper, often using unmalted roasted barley rather than chocolate malt. But there are stouts weaker than some porters and porters roastier than some stouts, and no single property reliably separates them.

  • The account that porter was invented at a single moment by one London brewer as a ready-made substitute for a three-way blend is not supported by the contemporary record.

    The traditional account credits Ralph Harwood of Shoreditch with creating "entire butt" around 1722 to replace a publican’s blend of three beers.

    Historians working from period sources find the Harwood story appearing only decades later, and describe porter instead as a gradual evolution of London brown beer, driven by aged-and-fresh blending practice and by the scale economics of large London breweries.

    The Harwood attribution is repeated widely enough to be worth addressing directly rather than omitting.
