Maris Otter

A named British barley variety kept in production for flavour rather than yield — the classic base malt for bitter and English IPA.

Maris Otter is unusual in this catalogue because it is a barley *variety* rather than a malting style. Modern varieties out-yield it substantially, and it survives commercially because British brewers will pay a premium for the depth it gives.

What it does

Base malt. Fully modified, gently kilned malt with enough enzyme activity to convert itself and some adjunct. Forms the bulk of a grist.

A specific barley variety released in 1966 and maintained despite low agricultural yield, because brewers value its flavour. Traditionally floor-malted, though most modern production is not.
