Wee heavy is Scotland's strong ale: 6.5–10%, deeply malty, with caramel and dark fruit from a long boil that produces genuine kettle caramelisation. Hop character is minimal by design, and the balance sits a long way toward malt sweetness.
The peat smoke frequently attributed to the style is largely a modern invention, and traditional examples are not smoked. Where a smoky note appears it usually comes from a brewer adding peated whisky malt in response to the expectation rather than from any historical practice.
Kettle caramelisation is what to look for and what most modern examples lack: a genuinely long boil produces a toffee depth that added crystal malt only imitates. A good one is rich without being sticky and finishes with more dryness than the aroma promises. Serve it well above fridge temperature; cold, it reads as sweet and little else.

Freshness and storage
Wee heavy is typically at its best 12–48 months after packaging, and time is working for it rather than against it.
Rewards age. Given cool, dark, upright storage this develops depth most drinkers would call an improvement. Buy two and compare.

What changes with time
- Oxidation. Reaction with oxygen, producing wet cardboard and sherry notes in pale beer and dark-fruit depth in strong dark beer. Months to years, depending on packaged oxygen and temperature.
- Deliberate ageing. Keeping a beer on purpose, accepting some oxidation because of what it develops in return. One to ten years for suitable styles. Most beer is not suitable.
- Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

- Fusel alcohol — Harsh, solvent-like alcohol heat from fermentation run too warm or under stress — distinct from the pleasant warmth of a strong beer.
- Diacetyl — A buttery compound with a very low threshold — normally a sign of rushed fermentation, but traditional at trace levels in some Czech lagers.

Wee heavy does not have a separate history of its own. It is a reading of Scottish ale, and that is where the account belongs — repeating it here would be a second copy of one story.

Crystal malt is produced by stewing wet germinated grain so that starch converts to sugar inside the husk, then kilning so that sugar caramelises in place — which is what distinguishes it from ordinary kilned malt.

The higher alcohols behind fusel character are formed by yeast from amino acids through the Ehrlich pathway: the amino acid is transaminated to an alpha-keto acid, which is decarboxylated to an aldehyde and then reduced to the alcohol.

An inward-curving rim concentrates volatile aromatics in the headspace above the beer, which is a real and measurable effect and the only glassware mechanism with a straightforward physical basis.
