BeerHQ treats the shilling grades — 60/-, 70/-, 80/- — as strength tiers of one style rather than as separate styles, because they differ in gravity rather than in character. Some guidelines split them; the split is a judgement call rather than a fact about the beer.
The common claim that Scottish ales are smoky or peated is not supported by the historical record. Peated malt was not a traditional Scottish brewing ingredient; the association comes from whisky and from some modern reinterpretations.
The balance is the thing: substantial caramel malt with a finish that still clears, which is harder than it sounds at these gravities. Where it fails it is cloying rather than harsh, since there is almost no hop bitterness to hold the sweetness in check. Served too cold the malt closes up entirely, and cellar temperature makes a larger difference here than in most styles.

Freshness and storage
Scottish ale shows best within 2–6 months of packaging. After that it declines in quality rather than becoming unsafe.
No benefit from keeping. Sound for its window and then slowly less good. Nothing bad will happen quickly, but nothing good happens either.

What changes with time
- Oxidation. Reaction with oxygen, producing wet cardboard and sherry notes in pale beer and dark-fruit depth in strong dark beer. Months to years, depending on packaged oxygen and temperature.
- Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

How it got here
Scottish ales were sold under a shilling system — 60/-, 70/-, 80/- and upward — which recorded the price per hogshead and so, indirectly, the strength. The names survive as style markers long after the pricing they described stopped meaning anything.
The usual account is disputed. The familiar explanation — that Scottish ales are malty and lightly hopped because Scotland’s climate suited barley and not hops, and because hops were expensive to import — is widely repeated and poorly supported. Analyses of nineteenth-century Scottish brewing records show hopping rates broadly comparable to English practice; the low-hop, caramel-forward profile appears to be a twentieth-century development.
Common misconceptions
“Scottish ales are smoky because of peat.”
Peated malt was not traditionally used in Scottish brewing. The association is borrowed from whisky. Some modern brewers do add peated malt, but that is a contemporary interpretation rather than a revival of historical practice.
