London brown ale is a very low-gravity dark ale — often under 3.5% — that is distinctly sweet, with a lactose-free residual sweetness coming from low attenuation and dark caramel malt. It was a working-class London beer and it is now almost extinct.
It is worth knowing because it explains what modern brown ale drifted away from. The southern English brown ale tradition was sweet and weak; the northern one was drier and stronger, and it is the northern reading that survived.
Almost nobody will encounter one, and the reason to know it is comparative rather than practical: it is the reference point that makes sense of why British brown ale means two different beers depending on where you are. If you do find one, expect something closer to a low-strength sweet stout than to anything called brown ale today.

Freshness and storage
London brown ale shows best within 3–6 months of packaging. After that it declines in quality rather than becoming unsafe.
No benefit from keeping. Sound for its window and then slowly less good. Nothing bad will happen quickly, but nothing good happens either.

What changes with time
- Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

Faults to watch for
- Unintended sweetness — Beer that finishes sweeter than intended, from under-attenuation, excess crystal malt, or a mash run too warm.
- Oxidation — The universal ageing fault: oxygen degrades beer into papery, cardboard-like staleness, and dulls everything that made it good.
How it got here
The southern English reading of brown ale: very low in strength, dark and distinctly sweet, brewed for a working-class London trade that no longer exists. It survived commercially into recent decades in a single beer and is now effectively extinct, which is why "brown ale" today means the northern style almost everywhere.

On Unintended sweetness
The temperature at which beta-amylase stops working is genuinely unsettled, and the round numbers repeated in brewing guidance sit between two incompatible sets of published figures.
— The long-standing figures, tabulated in the review, put beta-amylase’s temperature optimum at 55–65 °C and its inactivation at 74 °C.
— Recent work the review cites puts the optimum far lower, between 45 °C and 50 °C, with inactivation beginning at 52.5 °C and only 10% of activity remaining after 3.4 minutes at 60 °C.
The review sets both out without resolving them. The practical guidance a brewer acts on — mash cool for a dry beer, warm for a full one — is unaffected either way, which is why the disagreement has survived; but a specific inactivation temperature is not something BeerHQ can state.
Genuinely contested Credible sources disagree, so both positions are given rather than one.

Crystal malt is produced by stewing wet germinated grain so that starch converts to sugar inside the husk, then kilning so that sugar caramelises in place — which is what distinguishes it from ordinary kilned malt.

On Unintended sweetness
Above about 72 °C no further fermentable sugar is produced in the mash: alpha-amylase continues to break starch down but only into dextrins, which yeast cannot ferment and which remain in the finished beer as body and sweetness.

Staling reactions in packaged beer are strongly temperature-dependent, with the conventional working figure being that the rate roughly doubles for every 10 °C increase in storage temperature.
