Irish red ale is defined by restraint. A modest amount of roasted barley gives it the colour and a dry, faintly toasted finish, and beyond that very little happens: low bitterness, low ester character, moderate strength. The style's identity comes from that dryness rather than from the caramel sweetness the colour leads people to expect.

It is frequently mistaken for a maltier, sweeter beer than it is. If a red ale finishes sweet and sticky it is closer to an American amber; the Irish version should finish clean enough that the next mouthful is welcome.

Judge it on the finish rather than the aroma, because there is very little aroma to judge. A good one is clean, dry and quietly toasty with a faint mineral edge from the roasted barley, and the whole point is that you can drink several. Colour is the least informative thing about it: plenty of beers sold as red ale are amber ales with different marketing.

Freshness and storage

Irish red ale shows best within 2–4 months of packaging. After that it declines in quality rather than becoming unsafe.

Drink fresh. Buy it as young as you can and drink it soon. What makes this beer worth drinking is the first thing to leave it.

What changes with time

  • Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

How it got here

Ireland brewed ale long before it brewed stout, but the specific category now sold as Irish red ale took its recognisable shape in the twentieth century, and its spread outside Ireland owes a great deal to a single widely-exported brand.

The usual account is disputed. Whether "Irish red ale" describes a continuous native tradition or a modern marketing category is genuinely disputed. Ale brewing in Ireland long predates it, but the style name and its codified profile date from twentieth-century commercial brewing and were substantially reinforced by international marketing.
