Best bitter is the middle of the three bitter strengths, and the extra gravity over ordinary bitter buys balance rather than power. There is more malt to carry the hops, so the bitterness reads firmer without becoming sharp, and the beer holds its shape better through a session than the numbers suggest.
Like all bitter it is designed around cask dispense: low carbonation, cellar temperature, drawn through a handpump. Served cold and fizzy the malt flattens and the hop character disappears, which is why the same beer can seem excellent in a pub and thin from a bottle.
A step up in strength and depth from ordinary bitter rather than a different idea, and the extra gravity buys a fuller caramel malt character without losing the drinkability that defines the family. This is the beer most people picture when they think of English ale.
It is also the most food-friendly beer in the British repertoire, with the malt to meet roast meat and the bitterness to handle cheese and fat — the classic pairing with Welsh rarebit works partly because the same kind of beer often goes into the sauce. As with any cask beer, the pub's cellar has as much say in how it tastes as the brewery does.

Freshness and storage
Best bitter shows best within 3–21 days of packaging. After that it declines in quality rather than becoming unsafe.
Drink fresh. Buy it as young as you can and drink it soon. What makes this beer worth drinking is the first thing to leave it.

What changes with time
- Oxidation. Reaction with oxygen, producing wet cardboard and sherry notes in pale beer and dark-fruit depth in strong dark beer. Months to years, depending on packaged oxygen and temperature.
- Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.
Guidance, not an expiry date. How a beer is stored matters more than the date printed on it, and staling roughly doubles in rate for every 10 °C. See storage and freshness for the full model.
What to eat with it
- Bangers and mash
The default pub pairing, and it works for structural reasons rather than habit: bitterness cuts sausage fat, and the beer's light caramel meets the onion gravy exactly.
- Cheddar
A ploughman’s in two parts. Nutty, biscuity malt echoes the cheese’s savoury depth while modest bitterness cuts the fat, and neither is strong enough to bury the other.
- Ploughman's lunch
Built for each other. Malt handles the cheese, bitterness handles the fat, and the beer has enough acidity of its own not to be flattened by the pickle.
- Steak and ale pie
The beer is often literally in the gravy. A best bitter has the malt depth to sit beside braised beef and enough bitterness to stop the pastry and fat coating the palate — and the shared caramel and toast between the two makes them read as one dish rather than two things.
- Sunday roast
Malt sweetness echoes the roast potatoes and gravy, bitterness handles the fat, and at around 4% you can drink it through a long lunch. The pairing is what the style was built around.
- British territorial cheese
Wensleydale and Cheshire are lactic and fresh rather than savoury and aged, so they are far easier to bury than cheddar. A bitter meets them in their own register — the pairing behind a ploughman’s, and the reason it is a bitter on the table rather than a barley wine.

Characteristics that may be expected here
Each of these is treated as a fault in most beer, and in this style it can be part of the character. Intensity and context decide which: a trace that suits the style and an obvious, dominating version of the same thing are not the same finding. Undercarbonation
Cask-conditioned British ale is deliberately low in carbonation, and sahti is essentially still. What would be flat in a pilsner is correct there. The fault is carbonation below what the style intends, not low carbonation as such.
Faults to watch for
- Oxidation — The universal ageing fault: oxygen degrades beer into papery, cardboard-like staleness, and dulls everything that made it good.
- Infection — Unintended microbial growth — which is a fault only because it was unintended, since the same organisms define lambic.
- Dirty dispense lines — Beer spoiled between keg and glass by microbial growth in the lines — a venue problem rather than a brewery one.
How it got here
"Best" is a brewery’s own word for its better bitter, not a defined strength. Most British brewers ran a ladder — ordinary, best, and often a special or strong above it — brewed to the same shape at rising gravities, and the names describe positions on that ladder rather than distinct traditions.
1830–1860 The Burton union system comes into use
A linked array of oak casks that continuously separated yeast from fermenting beer, and a large part of the character of Burton pale ale.

How it is made
The steps that shape this style in particular, rather than the ones every beer goes through.
- Infusion mash — Reach and hold a single conversion temperature by mixing grain with water at a calculated strike temperature, without further heating.
- Open fermentation — Ferment in a vessel open to the air, allowing krausen to be skimmed and yeast to be cropped from the surface.
- Cask conditioning — Complete fermentation and carbonation inside the cask the beer will be served from, so it arrives at the drinker alive.

On Infection
Packaged beer is a hostile environment for human foodborne pathogens: the combination of ethanol, a pH typically between about 3.8 and 4.6, hop-derived iso-alpha-acids with antibacterial activity, near-absent oxygen and dissolved carbon dioxide means no such pathogen is known to survive and grow in it.

The Supply of Beer (Tied Estate) Order 1989 required any brewer with interests in more than 2,000 licensed premises to divest, stop brewing, or come within a ceiling of 2,000 premises plus half the excess above that, by 1 November 1992.

On British cask ale
The Beer Orders are widely held to have separated pub ownership from brewing in Britain: rather than the tied estates dispersing, large parts of them were sold into newly formed pub companies, and several national brewers left brewing altogether. How much of that the Orders caused, as against a consolidation already under way, is a matter of historical interpretation rather than an established finding.

On Undercarbonation
The prickle of a carbonated beer is a chemical sensation rather than a physical one. Dissolved CO₂ is converted to carbonic acid at the oral surface by carbonic anhydrase, and the acid stimulates trigeminal nerve endings — so the bite is felt even when no bubbles form at all.
