Strong bitter, or ESB, is the top of the three bitter strengths, and the extra gravity changes the balance rather than simply amplifying it. There is enough malt for genuine caramel and dried-fruit depth, and the bitterness rises to meet it — so the beer is fuller and rounder than a best bitter without becoming sweet.
The ESB abbreviation is a brand name that became a category, which is worth knowing when guidelines treat it as a formal style. Traditionally cask-conditioned like the rest of the bitter family, and equally diminished by cold, fizzy service.
The malt is what to judge. At this gravity there is room for genuine dried fruit and caramel depth, and a good ESB tastes like a bigger beer than its strength rather than simply a stronger bitter. Where it fails it is usually sweetness left behind rather than bitterness missing, and the finish is where that shows.

Freshness and storage
Strong bitter shows best within 1–4 months of packaging. After that it declines in quality rather than becoming unsafe.
Drink fresh. Buy it as young as you can and drink it soon. What makes this beer worth drinking is the first thing to leave it.
- A delicate beer with a short window. What makes it good is cleanliness and definition, which are the first things to blur.
What changes with time
- Flavour decline. The beer is still perfectly sound, but the most volatile parts of its character have faded. Weeks to a few months, fastest in heavily dry-hopped beer.
- Oxidation. Reaction with oxygen, producing wet cardboard and sherry notes in pale beer and dark-fruit depth in strong dark beer. Months to years, depending on packaged oxygen and temperature.
- Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

Strong bitter does not have a separate history of its own. It is a reading of Ordinary bitter, and that is where the account belongs — repeating it here would be a second copy of one story.
How it is made
The steps that shape this style in particular, rather than the ones every beer goes through.
- Infusion mash — Reach and hold a single conversion temperature by mixing grain with water at a calculated strike temperature, without further heating.
- Open fermentation — Ferment in a vessel open to the air, allowing krausen to be skimmed and yeast to be cropped from the surface.
- Cask conditioning — Complete fermentation and carbonation inside the cask the beer will be served from, so it arrives at the drinker alive.

Extra Special Bitter. It began as a specific Fuller’s brand name rather than a category, and is a registered trademark in some markets. It has since become a general term for the strongest tier of bitter, which is why BeerHQ files it as an alias rather than as the style name.

Packaged beer is a hostile environment for human foodborne pathogens: the combination of ethanol, a pH typically between about 3.8 and 4.6, hop-derived iso-alpha-acids with antibacterial activity, near-absent oxygen and dissolved carbon dioxide means no such pathogen is known to survive and grow in it.

The Supply of Beer (Tied Estate) Order 1989 required any brewer with interests in more than 2,000 licensed premises to divest, stop brewing, or come within a ceiling of 2,000 premises plus half the excess above that, by 1 November 1992.

On British cask ale
The Beer Orders are widely held to have separated pub ownership from brewing in Britain: rather than the tied estates dispersing, large parts of them were sold into newly formed pub companies, and several national brewers left brewing altogether. How much of that the Orders caused, as against a consolidation already under way, is a matter of historical interpretation rather than an established finding.
