Table beer occupies a place in Belgian food culture that has no British or American equivalent — a low-alcohol beer treated as an ordinary mealtime drink. Its historical presence in school canteens is frequently cited and reflects a period when weak beer was safer than the available water supply, and social norms around alcohol differed substantially from today’s.
Judged as beer rather than as a curiosity it is genuinely difficult to brew: at 1–3% there is nothing to carry flavour, so the good ones rely on the yeast doing almost all the work. Expect it dry, lightly spicy and quenching. It also predates the modern alcohol-free category by a very long way and solves the same problem by brewing weak rather than by removing alcohol.

Freshness and storage
Belgian table beer shows best within 2–4 months of packaging. After that it declines in quality rather than becoming unsafe.
Drink fresh. Buy it as young as you can and drink it soon. What makes this beer worth drinking is the first thing to leave it.
- A delicate beer with a short window. What makes it good is cleanliness and definition, which are the first things to blur.
What changes with time
- Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.
In the package
- Brown glass bottle — No format-specific concerns beyond the general advice above.
- Keg — No light can reach the beer, so lightstrike is impossible in this format.
Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

How it got here
Table beer was the low-strength everyday beer of Belgian households, brewed to be drunk with meals rather than for effect, and it was served in Belgian school canteens well into the twentieth century. Its decline tracks the arrival of soft drinks, and recent interest in it has as much to do with low-alcohol drinking as with tradition.
How it is made
The steps that shape this style in particular, rather than the ones every beer goes through.

On Bottle conditioning
Whether naturally conditioned beer has a perceptibly finer carbonation than force-carbonated beer at the same level is disputed; what is not disputed is that bottle-conditioned beer contains live yeast that continues to scavenge oxygen.

On Infection
Packaged beer is a hostile environment for human foodborne pathogens: the combination of ethanol, a pH typically between about 3.8 and 4.6, hop-derived iso-alpha-acids with antibacterial activity, near-absent oxygen and dissolved carbon dioxide means no such pathogen is known to survive and grow in it.

On Infection
The organisms that do spoil beer — chiefly Lactobacillus, Pediococcus and Brettanomyces — are the same organisms deliberately used to produce sour and mixed-fermentation styles, which is why the identical organism is contamination in one brewery and the product in another.

A compromised package — visible mould at the closure, a pierced or corroded can, a lifted cap or cork — admits organisms the beer’s own chemistry did not exclude, and is the situation in which discarding the beer is the correct response.
