Regional. A living local tradition that no style body has formally codified.

Patersbier — "fathers’ beer" — is what the monks drink rather than what they sell. Low in strength but not in character, since the same expressive yeast is used. Rarely bottled commercially, which is why it remains obscure outside Belgium.

If you find one, it is the most instructive beer in any Trappist range: the same yeast and the same brewing, at a strength where nothing is hidden behind alcohol or sugar. Any flaw in the fermentation is fully exposed, which is presumably why the monks are confident enough to drink it themselves and cautious about selling it.

Where a brewery does sell one it is usually only at the abbey itself or in its own café, so this is a beer to seek out on the spot rather than to look for on a shelf. Expect something closer to a very dry, very hoppy Belgian pale ale than to any of the stronger beers the same yeast produces.

Freshness and storage

Belgian single shows best within 2–5 months of packaging. After that it declines in quality rather than becoming unsafe.

Drink fresh. Buy it as young as you can and drink it soon. What makes this beer worth drinking is the first thing to leave it.

  • A delicate beer with a short window. What makes it good is cleanliness and definition, which are the first things to blur.

What changes with time

  • Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

  • KegNo light can reach the beer, so lightstrike is impossible in this format.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

How it got here

Belgian single does not have a separate history of its own. It is a reading of Dubbel, and that is where the account belongs — repeating it here would be a second copy of one story.

    Whether naturally conditioned beer has a perceptibly finer carbonation than force-carbonated beer at the same level is disputed; what is not disputed is that bottle-conditioned beer contains live yeast that continues to scavenge oxygen.

  • On Acetaldehyde

    Acetaldehyde is a normal intermediate in alcoholic fermentation that yeast converts onward to ethanol, so its presence in finished beer generally indicates the beer left the yeast before fermentation and clean-up were complete.

  • On Acetaldehyde

    Unlike most off-flavours, acetaldehyde is often recoverable: left in contact with healthy yeast at a reasonable temperature, the compound is generally consumed.

  • On Solvent

    Acetate esters — ethyl acetate among them — are made by the yeast rather than extracted from anything. Acetyltransferase enzymes join acetyl coenzyme A to an alcohol, so the ester a beer carries depends on which alcohols the fermentation produced.

  • On Solvent

    Raising fermentation temperature or wort gravity increases acetate ester production, which is why the same yeast gives a clean beer in a cool fermentation and a solvent-like one when it runs hot.
