Emerging. Widely brewed and broadly agreed, but recent enough that its boundaries are still moving.

Distinct from dealcoholised beer: this is brewed to be weak rather than having alcohol removed, using a low-gravity wort and often a low-attenuating yeast to retain body. British brewing has a long history of doing this well, and it avoids the worty note that dealcoholisation can leave.

It sits above the alcohol-free thresholds in most jurisdictions and is legally an alcoholic drink.

Judged fairly, the best of these are remarkable: recognisably bitter, with real malt character and a proper cask finish, at strengths where most beer tastes like an imitation. The failure mode is wort character — a sweetish, vegetal note left behind when there was never enough fermentable sugar to consume. That is the thing to check for, and it is the difference between a genuinely low-strength beer and a thin one.

Freshness and storage

Low-alcohol bitter shows best within 3–14 days of packaging. After that it declines in quality rather than becoming unsafe.

Drink fresh. Buy it as young as you can and drink it soon. What makes this beer worth drinking is the first thing to leave it.

  • Changes quickly enough that freshness is the dominant quality variable.

What changes with time

  • Oxidation. Reaction with oxygen, producing wet cardboard and sherry notes in pale beer and dark-fruit depth in strong dark beer. Months to years, depending on packaged oxygen and temperature.
  • Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

  • OxidationThe universal ageing fault: oxygen degrades beer into papery, cardboard-like staleness, and dulls everything that made it good.
  • InfectionUnintended microbial growth — which is a fault only because it was unintended, since the same organisms define lambic.
  • Vegetal characterCooked-vegetable notes that are not DMS — a residual category rather than a single compound.

How it got here

Britain has a much older relationship with low-strength beer than the current category implies: gravity-based duty and wartime grain restriction pushed cask ale down repeatedly over the twentieth century, and ordinary bitter is itself the result. The modern low-alcohol bitter is a separate development, brewed deliberately below the duty and labelling thresholds rather than arriving there under pressure.

    Packaged beer is a hostile environment for human foodborne pathogens: the combination of ethanol, a pH typically between about 3.8 and 4.6, hop-derived iso-alpha-acids with antibacterial activity, near-absent oxygen and dissolved carbon dioxide means no such pathogen is known to survive and grow in it.
