Bock originates in the northern German town of Einbeck and was adopted by Bavarian brewers, where the name shifted through dialect toward "bock" — which also means goat, hence the goat imagery the style carries.

It is a beer about malt. There is no roast bitterness and very little hop presence; the depth comes from large quantities of Munich malt, often with decoction mashing, and from the long cold conditioning that keeps a beer of this strength clean.

What separates a good one is whether the malt depth arrives without heaviness. Long cold conditioning is doing that work, and a bock that tastes syrupy or hot has usually been rushed through it. Serve it cooler than its strength suggests and in a smaller measure than a Helles; at 6.5–7% it is a beer to sit with rather than to drink through an evening.

Freshness and storage

Bock shows best within 9–18 months of packaging. After that it declines in quality rather than becoming unsafe.

Tolerates age. Keeps well without getting better. Useful if you are stocking a cellar and want something that will still be right in a year.

What changes with time

  • Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

How it got here

Bock originates in Einbeck in Lower Saxony, which brewed a strong beer exported widely across northern Europe in the late medieval period. Bavarian brewers adopted it in the seventeenth century, and the name is generally explained as a Bavarian rendering of "Einbeck" that happens to mean "billy goat" — which is why the goat appears on so many labels.

  • On Decoction mash

    Whether decoction mashing produces a malt character that a well-executed step mash with modern malt cannot is genuinely disputed within the trade.

    Many traditional brewers and a substantial body of brewing literature hold that boiling part of the mash develops melanoidin character that cannot be reproduced otherwise.

    Several breweries historically associated with decoction have moved to step mashing without their beers being widely reported as diminished, and blind comparisons have not established a consistent difference.

    The practical justifications for decoction — hitting temperature steps without a thermometer, working with undermodified malt — have both disappeared. What remains contested is whether the flavour justification stands alone.

    The buttery or butterscotch character described as diacetyl is 2,3-butanedione, a vicinal diketone formed outside the yeast cell by oxidative decarboxylation of alpha-acetolactate.
