Pronounced MAIR-tsen.

The name records the practice it came from: brewed in March, before the summer brewing ban, and lagered in cold cellars until autumn. Stronger than everyday beer because it had to keep.

It was the Oktoberfest beer until the 1970s, when the Munich tents moved to the paler Festbier. Both remain commercially available, and the naming remains muddled.

Märzen means March, and the name records a practical constraint: before refrigeration, brewing in summer was unreliable, so a stronger beer was brewed in March and lagered in cold cellars through the summer to be drunk in autumn. That is the origin of both the style and its association with Oktoberfest.

What is served at the modern festival is mostly a paler, lighter Festbier rather than a true Märzen, which is a genuine and often-missed distinction. A proper Märzen is amber, firmly malty with toast and light caramel, and finishes drier than it smells — the dryness is what makes a litre of it possible.

Freshness and storage

Märzen shows best within 6–12 months of packaging. After that it declines in quality rather than becoming unsafe.

No benefit from keeping. Sound for its window and then slowly less good. Nothing bad will happen quickly, but nothing good happens either.

What changes with time

  • Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

Faults to watch for

  • DMSA cooked-vegetable note from a malt precursor that a vigorous open boil should have driven off.
  • DiacetylA buttery compound with a very low threshold — normally a sign of rushed fermentation, but traditional at trace levels in some Czech lagers.

How it got here

Bavarian regulation prohibited brewing through the summer months, because warm-weather brewing before refrigeration produced unreliable and sometimes dangerous beer. Brewers therefore made a stronger, more robust beer in March — Märzen — and stored it in cold cellars to last until autumn.

The autumn festivals where the last of it was drunk are the origin of the style’s association with Oktoberfest, an association that outlived both the brewing ban and, eventually, the beer’s presence at the festival itself.

  • On Decoction mash

    Whether decoction mashing produces a malt character that a well-executed step mash with modern malt cannot is genuinely disputed within the trade.

    Many traditional brewers and a substantial body of brewing literature hold that boiling part of the mash develops melanoidin character that cannot be reproduced otherwise.

    Several breweries historically associated with decoction have moved to step mashing without their beers being widely reported as diminished, and blind comparisons have not established a consistent difference.

    The practical justifications for decoction — hitting temperature steps without a thermometer, working with undermodified malt — have both disappeared. What remains contested is whether the flavour justification stands alone.
