Dunkel is the older Munich beer; the pale Helles only arrived in 1894. Munich’s carbonate-rich water suited darker malt, so dark beer is what the city brewed for centuries.

The flavour comes from Munich malt used in quantity rather than from roasted grain, which is why it tastes of bread crust and light chocolate rather than of coffee or char.

This was the everyday beer of Munich before pale malt made Helles possible, and it is built almost entirely on Munich malt — kilned warm enough to develop bread crust and light caramel, but stopped well short of the temperatures that would produce roast.

That distinction is the whole point of the style. A Dunkel is dark brown and tastes of toast and bread rather than coffee or chocolate, with no roast bitterness anywhere in it, and it is the clearest demonstration in beer that colour and roast character are separate things. A good one finishes clean and dry despite the malt depth.

Freshness and storage

Munich Dunkel shows best within 4–9 months of packaging. After that it declines in quality rather than becoming unsafe.

No benefit from keeping. Sound for its window and then slowly less good. Nothing bad will happen quickly, but nothing good happens either.

What changes with time

  • Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

How it got here

Munich Dunkel is the older Bavarian everyday beer, and its depth of malt character comes from the city’s carbonate-rich water, which suits dark malt and makes pale beer difficult. It was what Munich drank before Munich drank Helles.

It lost that position to a beer designed to answer Bohemian pilsner, and the historic style became the speciality while its replacement became the default.

Common misconceptions

Dark beer is heavy and high in alcohol.

Colour is set by a small proportion of dark malt and tracks neither strength nor body. A Munich Dunkel at 5% is lighter in body than many pale ales, and a Schwarzbier is nearly black and thoroughly sessionable.

How it is made

The steps that shape this style in particular, rather than the ones every beer goes through.

  • RoastingTake malt or raw grain to high temperature in a rotating drum to produce the deep colours and roast flavours of porter, stout and dark lager.
  • Decoction mashRaise a mash to its next temperature step by removing part of it, boiling that portion and returning it — the traditional continental method.
  • Diacetyl restRaise a fermentation’s temperature near its end so the yeast reabsorbs and reduces the diacetyl it produced earlier.
  • LageringStore beer cold for an extended period after fermentation to clarify it and produce the clean, rounded character lagers are named for.

  • On Decoction mash

    Whether decoction mashing produces a malt character that a well-executed step mash with modern malt cannot is genuinely disputed within the trade.

    Many traditional brewers and a substantial body of brewing literature hold that boiling part of the mash develops melanoidin character that cannot be reproduced otherwise.

    Several breweries historically associated with decoction have moved to step mashing without their beers being widely reported as diminished, and blind comparisons have not established a consistent difference.

    The practical justifications for decoction — hitting temperature steps without a thermometer, working with undermodified malt — have both disappeared. What remains contested is whether the flavour justification stands alone.
