Also known as polotmavé, polotmave, Czech half-dark lager.

Czech amber lager takes the soft water, Saaz hops and decoction character of Czech brewing and adds caramel and Munich malt. The result keeps the drinkability of a pale Czech lager while adding a bread-crust and light toffee depth, and the hop bitterness holds its own against the extra malt rather than being buried.

Sold as polotmavé, meaning half-dark, and usually found alongside the pale and dark versions in the same brewery's range. It is the least exported of the three and one of the most rewarding to find.

Look for the same softness that defines the pale Czech beers — this is a caramel-forward lager that should still finish clean and quenching rather than sticky. Where it goes wrong is sweetness: the extra malt makes it easy to leave too much residual sugar, and a polotmavé that clings has lost the drinkability that is the whole Czech idea.

Freshness and storage

Czech amber lager shows best within 3–6 months of packaging. After that it declines in quality rather than becoming unsafe.

No benefit from keeping. Sound for its window and then slowly less good. Nothing bad will happen quickly, but nothing good happens either.

What changes with time

  • Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

Faults to watch for

  • DiacetylA buttery compound with a very low threshold — normally a sign of rushed fermentation, but traditional at trace levels in some Czech lagers.
  • OxidationThe universal ageing fault: oxygen degrades beer into papery, cardboard-like staleness, and dulls everything that made it good.

How it got here

Czech amber lager does not have a separate history of its own. It is a reading of Czech premium pale lager, and that is where the account belongs — repeating it here would be a second copy of one story.

How it is made

The steps that shape this style in particular, rather than the ones every beer goes through.

  • Decoction mashRaise a mash to its next temperature step by removing part of it, boiling that portion and returning it — the traditional continental method.
  • Diacetyl restRaise a fermentation’s temperature near its end so the yeast reabsorbs and reduces the diacetyl it produced earlier.

  • On Decoction mash

    Whether decoction mashing produces a malt character that a well-executed step mash with modern malt cannot is genuinely disputed within the trade.

    Many traditional brewers and a substantial body of brewing literature hold that boiling part of the mash develops melanoidin character that cannot be reproduced otherwise.

    Several breweries historically associated with decoction have moved to step mashing without their beers being widely reported as diminished, and blind comparisons have not established a consistent difference.

    The practical justifications for decoction — hitting temperature steps without a thermometer, working with undermodified malt — have both disappeared. What remains contested is whether the flavour justification stands alone.

    Bohemian pale lager combined exceptionally soft local water, Moravian pale malt and Saaz hops, a combination that suited a very pale beer in a way most European water of the period did not.
