Also known as tmavé, tmave, Czech black lager.

Czech dark lager is considerably softer and sweeter than a German schwarzbier at similar colour: more caramel, more bread crust, a gentler roast and a rounder finish. Saaz bitterness keeps it from becoming cloying, and the body stays lighter than the colour prepares you for.

It is the style most likely to convert somebody who believes dark beer must be heavy. At around 4.5–5.5% and with almost no acrid roast, it is a dark beer built for the same volume drinking as its pale counterpart.

The measure of a good one is that it drinks like a pale lager that happens to be dark: soft, rounded, gently sweet and finishing clean enough to want another. Where it goes wrong it turns syrupy, which is the same failure as the amber version and comes from the same cause. Tank-served examples in Czech venues show it at its best by some distance.

Freshness and storage

Czech dark lager shows best within 4–8 months of packaging. After that it declines in quality rather than becoming unsafe.

No benefit from keeping. Sound for its window and then slowly less good. Nothing bad will happen quickly, but nothing good happens either.

What changes with time

  • Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

Faults to watch for

  • DiacetylA buttery compound with a very low threshold — normally a sign of rushed fermentation, but traditional at trace levels in some Czech lagers.
  • AstringencyA drying, tannic harshness from over-extracted grain husk — the classic sign of sparging too hot, too long or at too high a pH.

How it got here

Bohemian dark lager was brewed continuously through the period in which pale lager took the country’s reputation, and it was never displaced in the way Munich Dunkel was. It is darker and more coffee-toned than the Bavarian style and is still made at some of the oldest brewing sites in Prague.

How it is made

The steps that shape this style in particular, rather than the ones every beer goes through.

  • RoastingTake malt or raw grain to high temperature in a rotating drum to produce the deep colours and roast flavours of porter, stout and dark lager.
  • Decoction mashRaise a mash to its next temperature step by removing part of it, boiling that portion and returning it — the traditional continental method.
  • Diacetyl restRaise a fermentation’s temperature near its end so the yeast reabsorbs and reduces the diacetyl it produced earlier.
  • LageringStore beer cold for an extended period after fermentation to clarify it and produce the clean, rounded character lagers are named for.

  • On Decoction mash

    Whether decoction mashing produces a malt character that a well-executed step mash with modern malt cannot is genuinely disputed within the trade.

    Many traditional brewers and a substantial body of brewing literature hold that boiling part of the mash develops melanoidin character that cannot be reproduced otherwise.

    Several breweries historically associated with decoction have moved to step mashing without their beers being widely reported as diminished, and blind comparisons have not established a consistent difference.

    The practical justifications for decoction — hitting temperature steps without a thermometer, working with undermodified malt — have both disappeared. What remains contested is whether the flavour justification stands alone.
