Oats do very little for flavour and a great deal for texture. Their beta-glucans and proteins survive fermentation and stay in suspension, which is why an oatmeal stout feels silky and full at a gravity where a dry stout feels lean. The roast is usually softened to match, so the beer reads smoother in every dimension.

This makes it the easiest stout to recommend to somebody who says they do not like stout. The objection is almost always to the sharp acrid roast of unmalted barley, and an oatmeal stout is the version of the style that does not have it.

Oats contribute almost no flavour and a great deal of texture. Their high beta-glucan content gives a silky, mouth-coating body that barley alone cannot produce, and that texture — rather than any oat taste — is the entire reason for the style.

It sits between a dry stout and a sweet stout: fuller and smoother than the first, less sugary than the second, with the roast present but softened. A good one feels almost creamy without being heavy, and the roast should still be clearly there — an oatmeal stout that tastes only of texture has lost the point.

Freshness and storage

Oatmeal stout shows best within 3–8 months of packaging. After that it declines in quality rather than becoming unsafe.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

How it got here

Oatmeal stout belongs to the same early-twentieth-century family of stouts sold on nutritional grounds, and had almost entirely disappeared from British brewing by mid-century. The modern style descends largely from a deliberate revival in the 1980s, which re-established both the name and the expectation of a silky rather than a sweet stout.

How it is made
