Irish extra stout is the stronger, fuller sibling of dry stout — more roasted barley, more body, more bitterness, and enough alcohol to carry them. It occupies the ground between a session-strength dry stout and a foreign extra stout, and it is closer to what nineteenth-century stout actually was than the modern nitro pint is.
Served under CO₂ rather than nitrogen, which matters: the sharper carbonation keeps the roast bite intact instead of smoothing it away. Somebody who finds dry stout thin and imperial stout too much usually finds what they wanted here.
Because the roast is sharper here than in an imperial stout and the body fuller than in a dry stout, the balance point is narrow, and a good one holds it: the roast should bite without turning acrid, and the malt should carry without turning sweet. This is the stout to try if the dry version tastes hollow, and the one to avoid if the roast is what you found difficult.

Freshness and storage
Irish extra stout shows best within 4–9 months of packaging. After that it declines in quality rather than becoming unsafe.
No benefit from keeping. Sound for its window and then slowly less good. Nothing bad will happen quickly, but nothing good happens either.

- Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

Faults to watch for
- Astringency — A drying, tannic harshness from over-extracted grain husk — the classic sign of sparging too hot, too long or at too high a pH.
- Oxidation — The universal ageing fault: oxygen degrades beer into papery, cardboard-like staleness, and dulls everything that made it good.

Irish extra stout does not have a separate history of its own. It is a reading of Dry stout, and that is where the account belongs — repeating it here would be a second copy of one story.
How it is made
The steps that shape this style in particular, rather than the ones every beer goes through.
- Roasting — Take malt or raw grain to high temperature in a rotating drum to produce the deep colours and roast flavours of porter, stout and dark lager.
- Nitrogenation — Dissolve nitrogen alongside a low level of CO₂ so the beer pours with a dense creamy head and drinks soft rather than sharp.
