American stout is a dry stout scaled up and re-hopped: more roasted malt, considerably more bitterness, and American hop varieties contributing citrus and pine alongside the coffee and dark chocolate. The result is a beer where roast bitterness and hop bitterness stack, which is why it can read as much more aggressive than its gravity suggests.

Its boundary with American porter is genuinely soft, and honest answers say so. Where a distinction holds it is usually the grain: unmalted roasted barley gives the sharper, drier, more acrid roast associated with stout, while porter leans on chocolate and black malt for something rounder.

A good one keeps the two bitternesses distinguishable — you should be able to taste roast and hops as separate things rather than as a single wall. When they merge the beer reads simply as harsh, and the usual cause is dark malt taken too far rather than too much hop. Ageing does not help: the hop aroma fades long before the roast softens, leaving it unbalanced in the other direction.

Freshness and storage

American stout shows best within 2–6 months of packaging. After that it declines in quality rather than becoming unsafe.

No benefit from keeping. Sound for its window and then slowly less good. Nothing bad will happen quickly, but nothing good happens either.

What changes with time

  • Flavour decline. The beer is still perfectly sound, but the most volatile parts of its character have faded. Weeks to a few months, fastest in heavily dry-hopped beer.
  • Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

How it got here

American stout is the craft revival of a style British and Irish brewing had reduced to a small number of survivors. What makes it recognisable is not the malt, which follows the Irish reading, but the hopping: American brewers applied their own citrus and pine varieties at rates the original never carried, producing a beer that is roasty and assertively bitter at the same time.
