Removing alcohol from finished beer
Making a full-strength beer and then taking the alcohol back out — the approach that finally made alcohol-free beer taste like beer.
Before
Low-alcohol beer was made by not making much alcohol: stopping fermentation early, mashing to leave little fermentable sugar, or using a yeast that cannot ferment maltose. All three work and all three leave a characteristic sweet, worty, thin result, because the compounds that would have become alcohol are still there and the fermentation-derived flavours never developed. This is why alcohol-free beer had a bad reputation for decades, and the reputation was earned.
After
Distilling under vacuum lets alcohol be boiled off at low temperature, so the beer is not cooked; membrane methods separate alcohol without heat at all. Either way the beer ferments fully first, developing normal flavour, and the alcohol is removed afterwards. What remains is a genuinely difficult problem — alcohol carries aroma and contributes body, so removing it leaves a hole that has to be engineered around — but it is a far better starting point than never fermenting.

Why it spread
The technology matured through the 2010s and the market followed immediately, because demand was already there and had been badly served. Small breweries mostly cannot afford the plant, which is why alcohol-free beer skews toward large producers and contract arrangements.
What it displaced: Nothing — the older restricted-fermentation methods are still widely used, and are cheaper. The two approaches coexist and taste noticeably different.

Or that changed materially. A style listed here would be a different beer, or would not be brewable at all, without this.
- Alcohol-free pale lager
A pale lager produced at or near zero alcohol, now the largest and most refined part of the no-alcohol category.
- Alcohol-free IPA
An alcohol-free beer built around heavy dry hopping, since hop aroma is added after fermentation and survives the process intact.
- Alcohol-free stout
An alcohol-free dark beer where roasted grain does most of the work — one of the more successful conversions in the category.
- Alcohol-free wheat beer
An alcohol-free wheat beer — often the most convincing of the category, because wheat body and yeast esters survive dealcoholisation well.
What people get wrong
Alcohol-free beer is just beer with the alcohol left out.
That describes the older and worse method. The modern approach ferments the beer fully — so it develops normal flavour — and then removes the alcohol by vacuum distillation or membrane separation. The difference in the glass is large.
Historical small beer was an early alcohol-free beer.
Small beer was weak, not alcohol-free, and was made by reusing the grain from a stronger brew. It typically carried a couple of per cent of alcohol, which no modern alcohol-free designation would permit.

How did alcohol-free beer get good?
By changing the order of operations. Older methods avoided producing alcohol at all, which meant the beer never developed normal fermentation flavour and tasted sweet and worty. Modern methods ferment fully and then remove the alcohol — under vacuum, so nothing is cooked, or through a membrane, with no heat at all. The beer that remains started life as real beer.
