Emerging. Widely brewed and broadly agreed, but recent enough that its boundaries are still moving.
West Coast IPA is defined against the hazy style rather than by an independent history — the term became common only once a contrasting alternative existed. What it names is real: brilliantly clear, very dry, low in residual sweetness, with bitterness that lingers and a resinous, grapefruit-pith hop character.
The defining choice is what was taken out. Where a New England IPA adds proteins and sweetness, a West Coast IPA strips them away — a very lean malt bill and thorough attenuation leave nothing between the drinker and the hops, so bitterness and resinous pine character arrive undiluted over a bright, clear body.
It fell out of fashion when hazy IPA arrived and has returned largely unchanged, which says something about how well the design works. A good one is aggressively bitter without being harsh, dry rather than thin, and clear — and like any IPA it depends on freshness far more than on anything the brewer can do afterwards.

Freshness and storage
West Coast IPA shows best within 1–3 months of packaging. After that it declines in quality rather than becoming unsafe.
Drink fresh. Buy it as young as you can and drink it soon. What makes this beer worth drinking is the first thing to leave it.
- Built on hop aroma, which is the least durable thing in beer. What you are paying for is the first thing to leave.
What changes with time
- Flavour decline. The beer is still perfectly sound, but the most volatile parts of its character have faded. Weeks to a few months, fastest in heavily dry-hopped beer.
- Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.
In the package
- Aluminium can — No light can reach the beer, so lightstrike is impossible in this format. Very low oxygen ingress, which matters for a beer this dependent on hop aroma.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

Faults to watch for
- Faded hop character — The specific staling of hop character: the aroma fades first, and badly stored hops can turn cheesy.
- Oxidation — The universal ageing fault: oxygen degrades beer into papery, cardboard-like staleness, and dulls everything that made it good.
How it got here
For most of its life this beer was simply called IPA. "West Coast" is a retronym: it came into use in the 2010s once the hazy New England reading had spread far enough that brewers needed a word for the clear, bitter, resinous version that had been the default. The name describes a contrast that did not exist when the beer did.
1994–2004 The double IPA emerges
West Coast brewers pushed IPA to higher strength and far higher hop rates while keeping it dry, establishing a category defined by intensity without sweetness.

What is the difference between West Coast and New England IPA?
Almost everything except the hops. West Coast is brilliantly clear, very dry and aggressively bitter, with pine and grapefruit dominant. New England is hazy and opaque, soft and full in body, low in bitterness, with the same hops used almost entirely for aroma and flavour. They are built from the same ingredients toward opposite goals.

How much glass shape changes the experience of a beer beyond aroma concentration and head formation is disputed, and much published glassware advice asserts effects with no proposed mechanism.

Centennial is routinely described as a stronger Cascade, but Cascade is not in its pedigree: it descends from Brewer’s Gold, Fuggle and East Kent Golding lines, and the resemblance is convergence rather than parentage.

Hops carry amylolytic enzymes that break down dextrins the brewing yeast could not ferment, so heavy dry hopping can restart fermentation in the package — lowering final gravity, raising alcohol, generating additional carbon dioxide and regenerating diacetyl.
