Bière de garde is the farmhouse beer of French Flanders, and where saison went dry and peppery it went malty and rounded. Expect toasty, bready malt, a soft rather than sharp finish, moderate strength around 6–8% and only restrained yeast character — closer to a strong lager in balance than to its Belgian neighbours.

The name means beer for keeping, and the extended cold conditioning it refers to is what gives the style its smoothness. Traditionally amber, though pale and dark versions are both established.

Judge it on smoothness rather than on complexity, because the long cold conditioning that names the style is what it is for. A good one is rounded and seamless with a toasty malt depth and very little sharpness anywhere. Some traditional examples carry a faint cellar or corked note that is characteristic rather than faulty, though the line between that and genuine contamination is thin.

Freshness and storage

Bière de Garde shows best within 6–24 months of packaging. After that it declines in quality rather than becoming unsafe.

Tolerates age. Keeps well without getting better. Useful if you are stocking a cellar and want something that will still be right in a year.

  • Strong enough and malt-led enough to keep well, without gaining much from the wait.

What changes with time

  • Oxidation. Reaction with oxygen, producing wet cardboard and sherry notes in pale beer and dark-fruit depth in strong dark beer. Months to years, depending on packaged oxygen and temperature.
  • Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

How it got here

Bière de garde is the French counterpart to the Walloon farmhouse tradition on the other side of the same border, brewed in the Nord-Pas-de-Calais region and, as the name says, kept: matured for months before drinking. Almost all of the region’s small farm breweries disappeared over the twentieth century, and the style survives through a handful of commercial brewers who continued it.

  • On Bottle conditioning

    Whether naturally conditioned beer has a perceptibly finer carbonation than force-carbonated beer at the same level is disputed; what is not disputed is that bottle-conditioned beer contains live yeast that continues to scavenge oxygen.

    Widely repeated trade and enthusiast position that secondary fermentation produces smaller, finer bubbles and a softer mouthfeel.

    Carbonation level and dispense conditions determine bubble behaviour, and no controlled work establishes a difference attributable to the carbonation route itself at matched volumes.

  • On Solvent

    Acetate esters — ethyl acetate among them — are made by the yeast rather than extracted from anything. Acetyltransferase enzymes join acetyl coenzyme A to an alcohol, so the ester a beer carries depends on which alcohols the fermentation produced.
