Commercial category. A marketing or shorthand term that behaves like a style. Useful for finding beer; treat its boundaries as loose.

Red IPA is an American IPA over a crystal-and-roast malt base rather than a purely pale one. The extra caramel and light toast changes what the hops do: citrus and pine read as darker and more resinous, and the bitterness lands rounder because there is residual sweetness to meet it.

The risk is the same one amber ale runs. Too much crystal malt and the beer turns cloying, at which point the hop aroma has nothing to cut through. The best examples keep the colour and use restraint with the sweetness.

Freshness matters here as much as in any IPA and is easier to miss, because the caramel base masks the early stages of hop fade. A three-month-old red IPA still tastes like something; it just tastes like an amber ale. Buy it as young as the date allows, and treat a beer whose aroma has gone quiet as the malt beer it has become rather than the hoppy one it was.

Freshness and storage

Red IPA shows best within 1–4 months of packaging. After that it declines in quality rather than becoming unsafe.

Drink fresh. Buy it as young as you can and drink it soon. What makes this beer worth drinking is the first thing to leave it.

  • Built on hop aroma, which is the least durable thing in beer. What you are paying for is the first thing to leave.

What changes with time

  • Flavour decline. The beer is still perfectly sound, but the most volatile parts of its character have faded. Weeks to a few months, fastest in heavily dry-hopped beer.
  • Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

How it got here

A taxonomic name rather than an origin: crystal malt added to an American IPA, sitting where amber ale and IPA overlap. It appeared in the 2010s as competition categories and taprooms needed a word for beers that were being brewed either way already.

How it is made

The steps that shape this style in particular, rather than the ones every beer goes through.

  • Whirlpool hoppingSteep hops in wort held below boiling — typically 75–85 °C — to extract aroma compounds with far less isomerisation than a boil addition.
  • Dry hoppingAdd hops to beer after fermentation, without heat, to extract aroma compounds while adding essentially no bitterness.
