Pronounced ALT-beer.
"Alt" means old, referring to the older top-fermenting method that Düsseldorf kept while lager took over elsewhere in Germany — not to the age of the beer.
The malt is toasty and nutty rather than caramel-sweet, and the bitterness is firm and clean. Traditional "sticke" versions are stronger seasonal releases.
A good Alt is deceptively hard to place: warm-fermented like an ale, then cold-conditioned until it drinks with a lager's cleanness, so the fruit character is present but very restrained. Bitterness is firm and the finish is dry. The Düsseldorf versions served from wooden casks are the reference, and a heavily carbonated cold Alt from a keg loses most of what distinguishes it.
Düsseldorf's own convention is worth knowing before ordering: the small glass is refilled continuously until you put a beermat over it, the same as Kölsch a short distance away. The two cities' beers are treated as rivals and made in almost opposite directions from the same hybrid idea, which makes tasting them together unusually instructive.

Freshness and storage
Altbier shows best within 2–4 months of packaging. After that it declines in quality rather than becoming unsafe.
Drink fresh. Buy it as young as you can and drink it soon. What makes this beer worth drinking is the first thing to leave it.
- A delicate beer with a short window. What makes it good is cleanliness and definition, which are the first things to blur.
What changes with time
- Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.
In the package
- Keg — No light can reach the beer, so lightstrike is impossible in this format.
- Brown glass bottle — No format-specific concerns beyond the general advice above.
- Aluminium can — No light can reach the beer, so lightstrike is impossible in this format.
Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

How it got here
"Alt" means old, and refers to the method rather than the beer: Düsseldorf’s brewers kept top-fermenting when Germany converted almost wholesale to bottom-fermenting lager, and the name marks that choice. Like Kölsch it is warm-fermented and then cold-conditioned, and the two cities’ rivalry over their respective beers is long-running and only partly in jest.

On Diacetyl
The buttery or butterscotch character described as diacetyl is 2,3-butanedione, a vicinal diketone formed outside the yeast cell by oxidative decarboxylation of alpha-acetolactate.
