Commercial category. A marketing or shorthand term that behaves like a style. Useful for finding beer; treat its boundaries as loose.
Lactose is unfermentable by brewing yeast, so it stays in the finished beer as residual sweetness and body. That makes this style unsuitable for anyone avoiding lactose, which is worth stating plainly since the name does not make it obvious.
That single fact is also the whole mechanism. The lactose survives fermentation untouched while everything else attenuates, so the beer finishes thicker and sweeter than its gravity would suggest, and the fruit purée usually added alongside it sits on that sweetness rather than being cut by a dry finish.
It is a short-lived beer. The fruit and hop aroma that justify the sweetness fade within a few months, and what remains is a thick sweet beer with the reason for it gone. Buy it as fresh as you can find it.

Freshness and storage
Milkshake IPA shows best within 14–45 days of packaging. After that it declines in quality rather than becoming unsafe.
Drink fresh. Buy it as young as you can and drink it soon. What makes this beer worth drinking is the first thing to leave it.
- Built on hop aroma, which is the least durable thing in beer. What you are paying for is the first thing to leave.
What changes with time
- Flavour decline. The beer is still perfectly sound, but the most volatile parts of its character have faded. Weeks to a few months, fastest in heavily dry-hopped beer.
- Oxidation. Reaction with oxygen, producing wet cardboard and sherry notes in pale beer and dark-fruit depth in strong dark beer. Months to years, depending on packaged oxygen and temperature.
- Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.
In the package
- Aluminium can — No light can reach the beer, so lightstrike is impossible in this format. Very low oxygen ingress, which matters for a beer this dependent on hop aroma.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

Faults to watch for
- Faded hop character — The specific staling of hop character: the aroma fades first, and badly stored hops can turn cheesy.
- Gushing — Beer that erupts on opening, caused either by refermentation in the package or by fungal proteins from mould-affected barley.
- Unintended sweetness — Beer that finishes sweeter than intended, from under-attenuation, excess crystal malt, or a mash run too warm.
How it got here
Traced to collaborations between American and Scandinavian brewers around 2015, adding lactose, fruit purée and vanilla to a hazy IPA. What is added changes per release, which is why the category describes a treatment rather than a beer.
How it is made
The steps that shape this style in particular, rather than the ones every beer goes through.
- Whirlpool hopping — Steep hops in wort held below boiling — typically 75–85 °C — to extract aroma compounds with far less isomerisation than a boil addition.
- Dry hopping — Add hops to beer after fermentation, without heat, to extract aroma compounds while adding essentially no bitterness.

On Unintended sweetness
The temperature at which beta-amylase stops working is genuinely unsettled, and the round numbers repeated in brewing guidance sit between two incompatible sets of published figures.
— The long-standing figures, tabulated in the review, put beta-amylase’s temperature optimum at 55–65 °C and its inactivation at 74 °C.
— Recent work the review cites puts the optimum far lower, between 45 °C and 50 °C, with inactivation beginning at 52.5 °C and only 10% of activity remaining after 3.4 minutes at 60 °C.
The review sets both out without resolving them. The practical guidance a brewer acts on — mash cool for a dry beer, warm for a full one — is unaffected either way, which is why the disagreement has survived; but a specific inactivation temperature is not something BeerHQ can state.

How much glass shape changes the experience of a beer beyond aroma concentration and head formation is disputed, and much published glassware advice asserts effects with no proposed mechanism.

Citra was released in 2008 from the Hop Breeding Company programme and is a proprietary variety, with parentage including Hallertauer Mittelfrüh, US Tettnanger, Brewer’s Gold and East Kent Golding among others.

Much of Citra’s tropical and grapefruit character is carried by polyfunctional thiols perceptible at parts-per-trillion concentrations, many of which arrive in wort bound and inactive and are released by yeast enzymes during fermentation.

An inward-curving rim concentrates volatile aromatics in the headspace above the beer, which is a real and measurable effect and the only glassware mechanism with a straightforward physical basis.

Gushing-inducing hydrophobins are surface-active proteins that most filamentous fungi produce to grow across a liquid-air interface, and they reach the brewhouse when excessive fungal growth occurs on the grain either before harvest or in storage.

Gushing has two unrelated causes: excess package pressure from continued fermentation, and hydrophobin proteins produced by Fusarium mould on barley in the field, which survive the entire brewing process.

On Dry hopping
Hops carry amylolytic enzymes that break down dextrins the brewing yeast could not ferment, so heavy dry hopping can restart fermentation in the package — lowering final gravity, raising alcohol, generating additional carbon dioxide and regenerating diacetyl.

How hops are stored dominates how much of them survives: in a two-year trial, alpha-acid losses ran from roughly 12–36% under cold anaerobic storage to 63–99% in air at room temperature.

BeerHQ treats a hop substitution as a nearest-available match rather than an equivalence: substitutes share a broad aroma family, and the differences between them are usually the reason a brewer chose the original.

Above about 72 °C no further fermentable sugar is produced in the mash: alpha-amylase continues to break starch down but only into dextrins, which yeast cannot ferment and which remain in the finished beer as body and sweetness.
