American barley wine takes the English style's strength and malt depth and adds a hop rate to match — 60–100 IBU, with citrus and resin aroma layered over dark fruit and caramel. The two are in genuine tension, and the beer is built so that neither wins.
It ages in an unusual way: the hop aroma fades within a year while the malt deepens, so the same bottle is effectively two different beers depending on when it is opened. Both are legitimate, and knowing which you want is the point of cellaring it.
Decide which beer you want before opening it. Fresh, the hop aroma is the point and the malt is a counterweight; after two or three years the hops are gone and what is left is a rich English-leaning barley wine. Neither is a fault, but a fresh one bought old is a disappointment, and dating is often the only way to tell.

Freshness and storage
American barley wine is typically at its best 6–60 months after packaging, and time is working for it rather than against it.
Rewards age. Given cool, dark, upright storage this develops depth most drinkers would call an improvement. Buy two and compare.

Ages well, but differently from the English version: the hop character fades within a year or two, leaving a malt-led beer. Whether that is improvement depends on what you wanted from it.
What changes with time
- Flavour decline. The beer is still perfectly sound, but the most volatile parts of its character have faded. Weeks to a few months, fastest in heavily dry-hopped beer.
- Deliberate ageing. Keeping a beer on purpose, accepting some oxidation because of what it develops in return. One to ten years for suitable styles. Most beer is not suitable.
- Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.
Guidance, not an expiry date. How a beer is stored matters more than the date printed on it, and staling roughly doubles in rate for every 10 °C. See storage and freshness for the full model.

How it got here
The American reading dates from the mid-1970s, when a San Francisco brewery released a strong ale under the barley wine name at a time when almost nothing that strong was being brewed in the United States. What separated it from the English style within a decade was hopping: American brewers used the same citrus and pine varieties driving their pale ales, producing a beer with the strength of the English style and none of its restraint.

Crystal malt is produced by stewing wet germinated grain so that starch converts to sugar inside the husk, then kilning so that sugar caramelises in place — which is what distinguishes it from ordinary kilned malt.

The higher alcohols behind fusel character are formed by yeast from amino acids through the Ehrlich pathway: the amino acid is transaminated to an alpha-keto acid, which is decarboxylated to an aldehyde and then reduced to the alcohol.

How hops are stored dominates how much of them survives: in a two-year trial, alpha-acid losses ran from roughly 12–36% under cold anaerobic storage to 63–99% in air at room temperature.
