What the record supports
Patented, in 1817, a method of roasting malt in a closed rotating cylinder at high temperature — essentially a coffee roaster applied to grain. The importance is not the colour but the concentration: a very small proportion of intensely roasted malt could now supply all the colour and roast character a dark beer needed, so the rest of the grist could be pale malt. That mattered because the saccharometer had recently shown brewers that brown malt yielded poor extract, and Wheeler’s patent made the obvious reformulation practical. He did not invent dark beer, roasted grain or porter, all of which long predate him.
Why it matters
The point at which dark beer stopped being made by browning everything and started being made by adding a little of something very dark to a pale base — which is how essentially all dark beer is made today.
Wheeler is the neatest example in this catalogue of a technology whose significance is economic before it is sensory. The beer changed because the arithmetic changed, and the arithmetic changed because an instrument had made it visible.
